Just for clarification Samba rice is red rice,it is different,the rice we used here is seeraga samba rice,some call it as Jeera rice.This Seeraga samba rice (white and small and resemble like seeragam) has a unique flavor which enhances the taste and aroma.But if you didn't get jeera rice,you can try with normal rice.But for best results Seeraga Samba rice is better.Just try with normal rice for small quantity and if you like that taste you can do larger quantity.Please try and let me know. How many cups of water for 3cup of rice it's slightly confused

For 3 cups of rice the water should be 6 cups(3*2) .But already the gravy has approximately 1 cup of water as we added curd and other ingredients before.So you have to add 5 cups of water.Please try and let us know the feedback.Thanks.

sister,The bitterness may be because of ginger and masala not sauted properly.You have to saute the masala atleast for 20 minutes in low flame.

We are adding 12 cardamom and 14 clove for 1 kg rice and 1 kg mutton,so it won't bitter because of that.The bitterness may be because of ginger and masala not sauted properly.

Jathipathri is different sister.It is the cover of nutmug seed.In some other method of biriyani we use that. Jathikai podi (nutmeg seed powder) you will get in local grocery stores.Or you can get jathikkai(nutmeg seed ) and grate and use that.But if jathikai podi or grated jathikai seed,you have to put only little quantity or recipe taste change aagidum.Jathikkai kidaikavaillai endral adhu podamal seidhu parkavum.Nandri!

It's approximately 295 ml brother.We are using 1kg chicken and 1 kg rice for this amount of oil.So it should be fine .You always has option to reduce oil according to your taste. Also we will do these biriyani recipe on occasions (I mean not daily),so for taste we have added .

How many cups of water for 3cup of rice it's slightly confused
For 3 cups of rice the water should be 6 cups(3*2) .But already the gravy has approximately 1 cup of water as we added curd and other ingredients before.So you have to add 5 cups of water.Please try and let us know the feedback.Thanks.

How to avoid that bitter taste sir
sister,The bitterness may be because of ginger and masala not sauted properly.You have to saute the masala atleast for 20 minutes in low flame.
Hi sir ...if we use 12 cardamon and 14 clove.....will it not be bitter taste..?

Jathipathri is different sister.It is the cover of nutmug seed.In some other method of biriyani we use that. Jathikai podi (nutmeg seed powder) you will get in local grocery stores.Or you can get jathikkai(nutmeg seed ) and grate and use that.But if jathikai podi or grated jathikai seed,you have to put only little quantity or recipe taste change aagidum.Jathikkai kidaikavaillai endral adhu podamal seidhu parkavum.Nandri!

Do you know how much is 20 Tablespoon of oil ?
It's approximately 295 ml brother.We are using 1kg chicken and 1 kg rice for this amount of oil.So it should be fine .You always has option to reduce oil according to your taste. Also we will do these biriyani recipe on occasions (I mean not daily),so for taste we have added .
