Maybe the water jets are cooling the dross/slag too quickly and its solidifying and not getting blown out of the way, try a cut with same settings but without or less water(I've never seen water cooling done like that ie above the plate)

I’m planning on building very similar rail and drive setup. Are you happy with the nema23 motors or do you feel more powerful nema34 motors would of been better?

Unlike CNC routers, plasma cutters require very little torque. I made one with dinky little motors used in 3D printers.

good job, i built mine using a grbl based controller as well (modded grbl and my fusion post processor) .... add THC, but never thought of adding nozzle mounted water cooling... are you still using it? also

I not use Fusion - giust use freeCAD or inkscape + BlenderCAM for creating Gcode "GRBL COMPATIBLE" > universalGcodesender - ALL FREE SOFTWARE ! also good for 2.5D cnc machining

can you add on description for wiring the optocoupler?

Nice one man, for emf shielding, it could be coming back down the wires from the stepper coils, (had this problem with dc motor). To fix it, maybe add a diode or decoupling capacitor close to arduino and/or motor control boards.
