The first play would work better run down the Right side. Then you have the pickers on their correct side for a possible roll. In the Canada clip he is a lefty setting the low pick (they were strong left)

The guy who perfected his stick, because he constantly restrung it to make it fit to them. Going off of that they should have learned how to make a stick hook or slide, which helps on stringing different pockets and could string something up for everybody.

There's so many techniques for stringing that it's worth learning as player. Learn to string for yourself and you'll learn what pockets and channels work best for specific head types.
