  EGGPLANT WITH MEAT & CHEESE Eggplant, sliced lengthwise, 1CM or .40inch thick. Combine in a small bowl Olive oil and ½ teaspoon Salt, ¼ teaspoon pepper, ½ teaspoon sweet paprika and ½ teaspoon Oregano. Brush both sides of eggplant with this mixture on parchment lined baking sheet. Bake at 356F for 20 minutes. Meanwhile sauté ½ a onion, finely chopped in olive oil then add a finely chopped pepper, clove of garlic, minced and a dash of salt and pepper. Combine in pan Chopped meat 1/3 pound (150 grams), ¼ teaspoon Sweet paprika, ½ teaspoon Cumin ,1/2 teaspoon Ginger and ½ teaspoon coriander. Cook for 6 to 7 minutes. Stir in ½ cup plus 1 tablespoon Tomato puree then add 1/3 cup water. Cook covered for 10 minutes, remove from heat. Mozzarella shredded 3 ounces. Parmesan grated 2 ounces. Build stacks: Start using 3 slices of eggplant. Ladel a spoonful of meat mixture onto each slice then top with a sprinkling of each cheese. Add a slice of eggplant on top then meat mixture then cheeses. Repeat again ending with a sprinkling of oregano. Top with a few drops of olive oil. Bake at 356F for 15 minutes. Enjoy!

  For one eggplant:2 eggplants Olive oil Salt and pepper sweet paprika Origan 🔹 1 onion olive oil 2 peppers 2 cloves of garlic salt and pepper Minced meat 300g Sweet paprika Cumin Ginger coriander Tomato puree 250g 150ml water 🔹 Mozzarella 150g Parmesan 60g Dried oregano Olive oil 1st Cooking: Bake at 180 ° C for about 20 minutes 2nd Cooking: Put back in the oven at 180 ° C for about 15 minutes.
