Imagine all the energy to climb a hill. Think of the watt-hours of energy store in altitude by your total weight and elevation. Then as you go down the hill, all of that excess energy is converted into heat that is poured into that thin little brake disc. Why does it work? Because that brake disc can get quite hot and act like a little space heater dumping the heat energy into the air. Water boils at 212F. So with that hissing, it is above that. So that is fine; if you see a blue, black, or purple coloring of the steel; you can be 300F to 400F. Also fine. Your issue is if you get to 500F to 600F you can start to burn or melt plastic around the disc or in the brake caliper or around it. Essentially, that disc is a pedal powered space heater to do its job of stopping the energy you put into it. Potential energy climbing the hill that is released when going back down and kinetic energy when slowing from a fast speed.
