The Italian Food Boss will show you how to cook authentic, delicious Italian food like the 'nonnas' used to do!
Simply put, I'm an average Italian guy with a serious appetite. I was born and raised in Salento, down in Puglia, the heel of the Italian boot: I'm not just another "Italian" who only saw Italy on a few postcards!
In my step-by-step videorecipes I will cook simple dishes, easy to replicate by anybody, and will reveal my nonnas' secrets: the Da Vinci code of Italian cuisine.

You're so cute! You reminds me of a Sicilian guy i was engaged to for about 5 years when i was about 20. We didn't quite make it to marriage and we both married other people. Oh well. A controversial question, but do you consider a part of Italy??
😅 Yes, Sicily is part of Italy, and a beautiful part of it!
I make seafood pasta dishes all the time. Similar to yours. I live in southern Florida and go fishing every week. One of my favorites to catch is Mahi Mahi. Great on the grill or broiled and in a light tomato sauce with pasta. Your pan has a hump in the middle causing the oil to fill the sides of the pan and leave the middle dry. I would use a rubber mallet to tap the bottom when needed to flatten it out. This happens to all thin bottom aluminum or steel pans. I’ve since replaced them with thicker bottom sauté pans (stainless steel with copper filled bottoms) which eliminates the problem. It also makes for a more even heat distribution and heat retention. Ciao.
You are absolutely right on the pan! I am planning to change them all 👍
Looks delicious! Will try and thankyou
Thank you! Let me know how it goes!
You have a lemon tree. So jealous ; )
I do. Great lemons!
You’re awesome!!
Oh, thank you!
Hahaha. Goosebumps with crushed fennel in sausage… me too! It would be nice for you to make another video before your daughter goes to college!
Ohhhh man, thanks! She's only 6 so I hope I'll get around it 😆
My friend, I am happy to finally find genuine Italian chef. What city are you from?
Lecce! 💛❤️
provare a schiacciare il pomodoro e cuocerlo con la pasta. 👍👍
Yeah but that's something different. We do it too by the way 😀
No... boil first .. sorry
Ok
Hmmm, no recipes for quite a while? I read somewhere some Italians don’t add onion and garlic to tomato sauce. There is no garlic in this recipe. I poke holes in my sausages to avoid bursting the sausages.
You're right, has been a while! My daughter keeps nudging me too, so maybe we'll do one new video soon... As per the onion and garlic, I do use onion to make the "soffritto", but not a big fan of garlic. In general, in Italy we don't use garlic as liberally as you see it in "Italian food" abroad.
I enjoyed your video .. Keep your daughter in the videos...She's SOOOOO CUTE!!!!
She's getting bigger now!
I love when people have their children involved in the cooking. Very well done....
Done a lot of that, now she only wants to watch cooking videos on KZread 😂
She is too cute. You are blessed, my friend. I need to try this recipe.
Let me know how it goes with the recipe! Kid is growing fast too 😁
Looks great. Question. Regular bread crumbs or Italian bread crumbs?
I don't know how "foreign breadcrumbs" are, so I'd say get the Italian ones 😅
💖💖💖
Thanks!
Add salt to the boiling water for the pasta if you want? your kidding right? yeah urrr joking
I mean... It depends how much of a fan you are of a high sodium diet.
So glad I found you! Thank you for your videos- they are excellent and inspiring!
Thank you! Time to cook and eat now 😅
Boring Italians.
Going to make this tonight. Might add feta at the end.
It'll be good!
Bravo, maestro!
Grazie! Did you try it?
I did, and the taste was amazing! My wife is Chinese, and a pasta fan. She loved it as well.@@ItalianFoodBoss
Where's the hot pepper flakes?
You can add 🌶 as you wish!
Seems to me you over cook squid.
Try it out and let me know how it goes ♥️
run cold water when chopping the onion.. and ..no crying. im going to try this!!
Let me know! Thanks! 🤟
Uh oh! dude you forgot to take the whole garlic out the pot.
I'm not allowed! There's a person in my family who eats that stuff but I can't say who 🤣
@@ItalianFoodBoss oh okay! Carry on.
that's our dinner for tonight 😃
Buon appetito!
Can’t wait to try this!! I like the fact that it’s one pot!! Thank you!
Yep. Good stuff but also practical!
Wish you had a print recipe option, it makes it so much easier.
I do! It's on my website. Enjoy, and make sure you spread the word 🙏 Here you go: italianfoodboss.com/pasta-with-sausage-and-broccoli/
Beloved, do you know the Lord Jesus Christ? Jesus is the Word of God, who became flesh. He lived a perfect, sinless life, then He died on the cross for our sins. On the third day, Father God resurrected Him; He rose from the dead; and now He is alive, and He sits at the Father God's right hand. He is the one and only true living God; there's no other, apart from Him. He loves us; He created us! He is not the God of religion, He is the God of a personal relationship! He desires a close relationship with us. He said in John 14:6, "Jesus answered, “I am the way and the truth and the life. No one comes to the Father except through me.' No one can come to heaven except through Jesus! Therefore, accept Jesus Christ as your Lord and Savior today, if you haven't done it yet! Repent of your sins, and ask Him to forgive you, cleanse you, and make you a new creation in Jesus Christ! Then invite Him into your heart, and into your life. Talk to Him and acknowledge Him on daily basis; run to Him in your distress, and He'll give you rest! Matthew 11:28-30 “Come to me, all you who are weary and burdened, and I will give you rest. 29 Take my yoke upon you and learn from me, for I am gentle and humble in heart, and you will find rest for your souls. 30 For my yoke is easy and my burden is light.” Beloved people, tomorrow is promised to none of us; and without Jesus Christ as our Lord and Savior, we won't have an eternal life in heaven. Accept Jesus as your Lord and Savior and His sacrifice on the cross today; do not wait another minute! John 3:16 "For God so loved the world that he gave his one and only Son, that whoever believes in him shall not perish but have eternal life. kzread.info/dash/bejne/hpV_pLaPoKXdY8o.html
Not sure about the poking part..... Dont they become dry
Not really. It just makes it easier to cook inside. I understand your question and potentially you could avoid poking it to retain the juices.
Grazie!! I'm an Englishman with an Argentinian misses (italian heritage). I made this tonight and it went done delicious. I'm trying to break the mould that English people can't cook, even though I'm terrible 😂 Grazie! Will look at some of your other recipes.
Great job! Feel free to look at the other recipes and impress your Argentinian lady with the best food she's ever tried after asado 🤣 Then, have some Alfajores as dessert 🇦🇷 Ciao! 💪🇮🇹
I am absolutely going to borrow this recipe for my family's next pasta night! We're always down to try new foods and this looks incredible!
Thank you! Please enjoy, this pasta is beautiful. And make sure EVERYBODY knows about the Italian Food Boss. Don't keep the goodies just for yourself 🤣
@ItalianFoodBoss You got it boss 😎😎
What is difference between sugo and ragu ?😊
"Sugo" could be translated genetically as "sauce", while "ragu" is the specific sauce with minced meat, sometimes referred to as "bolognaise sauce" in English speaking countries.
I, I made this and was great, other day made same with some Calabrian chilies and was epic, like 2 different sauces. Will keep both in pocket, depending on who cooking for. Tyvm
Sounds very tasty 😋 I love chilli but I have to adjust my recipes when I cook for the family 🤣
@@ItalianFoodBoss oh I understand lol. Have a large family so I try to separate whatever making early so can add heat to half lol. Sometimes can't do it🤷
Thank you! The first time I made pesto! I'm substituting konnyaku noodle instead of pasta. Still delicious!!
Great "fusion" idea! Enjoy! 😋
Love this channel, hopefully the food boss makes a comeback.
Like The Terminator once said: "I'll be back" 🤣
looks good
Thank you! Hope you tried it 🇮🇹💪
great
🇮🇹💪
@@ItalianFoodBoss good day to you
This recipe was really good. I did it with Pork and loved the flavor of the seasoning. The meat and bell pepper were overcooked after 1 hour in the oven, so check on it early.
Ooops. I hope it still turned out ok! 🇮🇹🌶
Absolutely miss this channel. I am surprised it doesn’t have more subscribers and views. Easy to follow recipes that are very well explained.
Thank you!!!
Can you make a tutorial on mackerel pasta with fresh mackerel?
That would be great, yes!
Bravo ragazzo. I love your channel, just subscribe. Keep these great recipes coming Tutti a tavola a mangiare. Arrivederci😊
Grazie! More recipes will come for sure 🇮🇹🌶
Bravo piatto molto buono
Grazie!
I made this varient, its very nice.. I used 2 cans of makeral one was in tomato sauce and the other brine.. very tasty
Nice!
What temperature do you fry the onions? Medium?
Low heat. Let them sweat slowly 😅
I love it! Gonna make this dish now! 😋 Che Buona!
Enjoy!
I always use dried Shitake Mushrooms with Chicken Stalk, turns out the best. Italian food is the easiest to cook. You just have to do it correctly. Otherwise, it's very easy to mess it up.
That's true 💪🇮🇹
This is the *best* linguine *EVER.*
Thank you!!! Wow!!
Forza Calabria
Alla grande!
Looks fantastic
Try it! 💪🏻🇮🇹
I want to cook the eggs to never have to worry about any discomfort or salmonella problems... but I also want to use the egg whites. For that I would usually cook the egg yolks slowly on a double boiler and then mix them in with the mascarpone. Can I just cook the yolk and the whites together that way? Or what should I do?
"Bagno maria" - basically "cook" them on steam. You definitely shouldn't cook the yolk separately in my opinion
