The Italian Food Boss will show you how to cook authentic, delicious Italian food like the 'nonnas' used to do!

Simply put, I'm an average Italian guy with a serious appetite. I was born and raised in Salento, down in Puglia, the heel of the Italian boot: I'm not just another "Italian" who only saw Italy on a few postcards!

    You're so cute! You reminds me of a Sicilian guy i was engaged to for about 5 years when i was about 20. We didn't quite make it to marriage and we both married other people. Oh well. A controversial question, but do you consider a part of Italy??

    I make seafood pasta dishes all the time. Similar to yours. I live in southern Florida and go fishing every week. One of my favorites to catch is Mahi Mahi. Great on the grill or broiled and in a light tomato sauce with pasta. Your pan has a hump in the middle causing the oil to fill the sides of the pan and leave the middle dry. I would use a rubber mallet to tap the bottom when needed to flatten it out. This happens to all thin bottom aluminum or steel pans. I’ve since replaced them with thicker bottom sauté pans (stainless steel with copper filled bottoms) which eliminates the problem. It also makes for a more even heat distribution and heat retention.     Hmmm, no recipes for quite a while? I read somewhere some Italians don’t add onion and garlic to tomato sauce. There is no garlic in this recipe. I poke holes in my sausages to avoid bursting the sausages.

    You're right, has been a while! My daughter keeps nudging me too, so maybe we'll do one new video soon... As per the onion and garlic, I do use onion to make the "soffritto", but not a big fan of garlic. In general, in Italy we don't use garlic as liberally as you see it in "Italian food" abroad.

    Not really. It just makes it easier to cook inside. I understand your question and potentially you could avoid poking it to retain the juices.

    Grazie!! I'm an Englishman with an Argentinian misses (italian heritage). I made this tonight and it went done delicious. I'm trying to break the mould that English people can't cook, even though I'm terrible 😂 Grazie! Will look at some of your other recipes.

    "Sugo" could be translated genetically as "sauce", while "ragu" is the specific sauce with minced meat, sometimes referred to as "bolognaise sauce" in English speaking countries.

    This recipe was really good. I did it with Pork and loved the flavor of the seasoning. The meat and bell pepper were overcooked after 1 hour in the oven, so check on it early.

    I always use dried Shitake Mushrooms with Chicken Stalk, turns out the best. Italian food is the easiest to cook. You just have to do it correctly. Otherwise, it's very easy to mess it up.

    I want to cook the eggs to never have to worry about any discomfort or salmonella problems... but I also want to use the egg whites. For that I would usually cook the egg yolks slowly on a double boiler and then mix them in with the mascarpone. Can I just cook the yolk and the whites together that way? Or what should I do?

    "Bagno maria" - basically "cook" them on steam. You definitely shouldn't cook the yolk separately in my opinion
