    You should not call your cheese manchego cheese. Only Manchego cheese from la Mancha in Spain can have that name. You are violating a protected brand.

    Want to have Manchego sheep in a northern farm climate, not sure how they could do in a wetter area. . .versus cold semi arid grassland in Spain.

    I’d use a different thermometer..those are wildly inaccurate..reflectivity affects every reading..seriously..

    Thank you John for your interest in our thermometer! We wanted to make a sweet little film on how we make uber small batches of cheese for ourselves. But this is not normally how we make cheese. We use a pretty special cheese vat that we had imported from the Netherlands. It has 2 probes (each worth about $2k each). They're pretty darn accurate ... at least according to the inspector that checks them every 3 months. Sometimes for fun I use the $2k probe to check my $20 probe. We mainly wanted to demonstrate that anyone can make unique and beautiful cheese with just the equipment they have at home. Many people in less developed countries use a stick for stirring and their hand for testing temperature. They still manage to create beautiful cheese too! We love the mystery of it all and would actually prefer a less precise method.

    Yes. You are correct. Many cheeses though still retain the name of the original. Otherwise, you find yourself trying to describe a cheese when you simply could have named a cheese that someone was familiar with. Most of our cheeses have original names, which leaves people wondering what they can compare it to. One gentleman asked if one of our cheeses was like a Velveeta .... whatttt?

    you can call your cheese sheep cheese, but not Manchego cheese. that is a violation of a Spanish protected cheese
