Looks like your test case was supposed to demonstrate the diverge from axis functionality and you suppressed the holes you would have used for it? seems like every video on youtube is scared of that functionality?

this is a really handy tool but i feel that it is greatly overpriced for what you're getting. if anything i feel that it should be sold along side the standard 3D CAD for mechanical applications.

I've created what I believe is basically this assembly and followed the steps shown here but I cannot set the weld faces, and get this message "Weld Edge Connector should belong to faces of surface bodies or sheet metal bodies" do I have to convert solid bodies to surfaces as a step not shown here or am I missing something obvious?

Well.. basically what you have shown is how to create two different models with compatible and incompatible mesh. Would have appreciated if there was more discussion on what is actual difference between them apart from elemental compatibility and what is causing that slight deviation in results. Though I know about this, came here to see what a reseller has to say about it.

You have good knowledge of how Solidworks electrical routing but you are wiring the ESC motor output into the controller board. Not correct. Those three heavy wires go from the ESC to the motor. The board connections should go to the small rectangular connector at the bottom left of the ESC. The two large connectors at the left of the ESC should go to V+ (battery). Just FYI.
