  Also by using a wooden spoon in the custard you can tell if it’s ready by drawing your finger down the back of the spoon. If it makes a clean line your custard is ready

  Next time use hot water to the chocolate. This will allow the chocolate to bloom and the flavor come out. Before you add the eggs you temper the eggs which you did. If you have eggs that curdle just use a strainer before adding to the ice cream mixture. I like using half and half for the custard
