looks delicious! i'm guessing this fileting method works better with smaller trout because the bones are much smaller? by any chance do you know if a filleting method like this is possible with bigger trout?

I left the rib bones attached because the fish were small. This technique works well on a larger trout and it is easier to remove all the bones.

Mr & Mrs Porknrec. Great to meet you guys by chance at the Aruba apartment last weekend. We watched this video in the UK before our vacation…..and there you were! We followed your great advice and arrived at 11am. Bagged our two red snapper & shrimp with a side of salad. Order #6 so managed to get a seat on the overwater covered deck. Great food. The red snapper was the highlight. By the time we left 75 minutes later the place was near on full with a line of about 15 people. Get there early folks. Enjoy the book Mrs Porknrec and both keep up the excellent work!

2024 update: We went at 11:30AM, already a line to the palm tree, but the line moved fast and we ordered by the time I finished my Chill, food came out in another 10 minutes. So don’t be discouraged, grab a beer and enjoy!

You shouldn't have taken the Troquet's Boston Speed out, eat it in the bar. Also, the other Boston Speed style dog is Larry Joe's New England Fire Pit in Mendon MA. I think it is better than the original (which is long gone). Larry Joe was a protege of Speed. Chris at Troquet bought the name and recipe from Speed's widow

How deep is it and what equipment did you use?
The deepest part around the reef is probably 20 feet, but the shipwreck is in about 50 feet. I record underwater with a DJI Osmo Action.
Went there yesterday. Mask decided to stop working near the flame corals. Lol, near death experience.
That’s the worst when your equipment fails during a swim, I’m glad you are ok.
