    Thank you. They are pressed wood called Blox by Jealous Devil. The ones on the video are the new type of Blox that they said will be rolled out it a few months. They are great because they don't produce a lot of smoke.

    I have been curious about that center chimney.... now i get that it just sits center on exterior but inner vent is still near the oven mouth... but i dont quite get the benefit of center position on exterior, other than esthetics? Thank you

    The advantage of the chimney sitting at the center with the vent close to the mouth is that the hot air exhausted from the oven is routed back over the dome, which efficiently heats the dome evenly. www.fornobravo.com/product-series/vesuvio-series-wood-ovens

    To learn about our ovens: www.fornobravo.com/ Ingredients 3/4 cup Soy sauce 1/2 cup Water 1/2 cup vinegar 1/2 cup Chopped onion 1/4 cup Minced garlic 1/4 cup Minced ginger 2 tbp Sesame oil 3 tbp Brown sugar 3 lbs Short ribs 2 pinches Green Onions for garnish Instructions 1. Start a fire in your Forno Bravo oven. 2. Wait for the wood to turn to coals. 3. While waiting, mix the marinade in a bowl. 4. Add the meat into the marinade. 5. Let it sit for 30 minutes. Optionally, you can marinate the meat for 12 hours. 6. Slide your tuscan grill over a bed of coals in the oven and wait for it to get hot. 7. With a high-temp glove or a metal hook, pull the tuscan grill to the oven's landing. 8. Put the short ribs on the grill and push the grill back into the oven. 9. Grill each side of the meat for 3-5 minutes. 10. Serve with rice and sprinkle with green onions.

    Depending on how large your mesh is you might be able to anchor it at the front and wrap it around from there.

    Certainly. You could eat it with spaghetti, steak, mashed potatoes, seafood, and more. You could also dip it in hummus or cheese sauce. It's goes well with a lot of food!
