This is not the reverse method I have read extensively about. In a reverse, searing method, you preheat the meat in the oven at a low temperature (approximately 250°). Once you ate within 10° of your final desired internal temperature, you take it out of the oven and then sear over very high heat. The method illustrated here seems to be more of a traditional grilling technique.

That looked to easy for an absolute non-chef like me, but it worked out brilliant. As we don’t have much chance to get moose meat in Germany I took a 25 ounce piece of meat out of the leg of a young fallow deer hint I hunted in spring. Everything worked exactly as you described, I extra bought a thermometer, after 50 minutes I had 60 degree celsius in the center. After a few minutes more I took it out. Never ever wild meat tasted better to me and my son. We have completely reduced our meat consumption to what I am able to get out of nature, therefore I am greatful to get new ideas how to prepare the meat. Thank you for this content!

Looks delicious. A couple points: 1) Please sharpen that knife You’re on the right path, but that isn’t quite reverse sear. Your indirect stage was too hot and too short. There should be no browning/caramelizing. With proper indirect/low-slow heating, no resting is needed after your sear. It’s already rested when the indirect stage is complete. But, you can’t argue with results and your results look delicious.

Mackerel is so healthy with a lot of healthy fat. Why destroying that with frying it in THAT much oil? It could easily fry in its own oil if the cook is not hasty, just 10 to 12 minutes.

Hi Angela, it is really tender and juicy! Also has a really good flavor. I guess because moose doesn't eat any processed food and just consumes what it finds in nature.

Hi @SudeeptoDas That's 250 Fahrenheit for 2hrs and 30minutes. If you dont have broil settings, you can grill it. If you want to use your oven, put your ribs on the top rack, increase temp around 500fahrenheit, and leave the oven door with a small opening. The goal is just to brown it and make sure it doesn't burn.

Hello! Great question! This way of cooking chicken is traditionally significant for the Igorots (Indigenous people of the Cordilleran region here in the Philippines). This is usually done for offering to Kabunyan (God) while asking favors. The gut, particularly the liver and bile, should be intact in order for the elders to read the offerer's fortune. Thank you!
