Hello my beautiful friends, my name is Yi I currently live in St. Louis with my husband and our Russian Blue cat baby Bao. I grew up in Sichuan Chengdu, a beautiful city in southwest China. One thing I miss most about my hometown is the food so on here I share my super easy and delicious recipes. A lot of them are inspired by the amazing food from Sichuan. What do fermented bamboo shoots smell like? I tried from a different brand of snail soup noodles, and they smelled like chemicals, not stinky, just like chemicals, so I don't know what they're supposed to smell like.

I used the red chilis from the Indian store - I toasted them first, then cut them in pieces so the seeds would fall out. Ground up in a blender. Then I combine with fresh Thai birdseye chili, gochugaru and 1 Mexican chipotle.

I made this twice. First time I didn't toast the peppercorns long enough and I used maybe a little too much bean paste- it ended up being too salty and the aromatics of the peppercorns completely overpowered it. Second time I used a little less bean paste, toasted the peppercorns/chili separately, and even added a small amount of msg - it turned out perfect. I used striped bass that I caught and the texture was wonderful.

@billyperry6567: It is tradition to not add salt to the hot pot base because that is the function of the dipping sauces.
My local chinese hotpot is so good .. i have been trying to copy it at home so i can eat hotpot more often but its not even close. My homemade version is not even close to the same flavor. Frying all the ingredients might be the diifference.
What Chinese people don’t and specially men is that Chinese women are super hot and feminine making them the best women in the world! 😅

You can use a regular hot pot base and add milk as instructed in my video ☺️
We just ate this and my girlfriend complained to me because she said the meat was kind of raw 😅 I told her that is how you eat it, it needs to cook in the soup 😅

Thanks 😅 Excuse me is the beef tripe pre cooked or is it raw like the regular beef? Because here in Mexico we eat that (we call it Menudo) and we usually cook it for a very long time like 2 hours 😳
