    just stumbled across this video. the state tree is Pecan. you should use that if you havent already for your pit. oak is ok...but pecan is so much better

    The Federal Goverment puts some money in the State Fund and they divide it up. Seems like Palacious got some of our money and that was the end of it. Until they can get more money.

    Keep your hopes up for full pier in near future. They have permit for few years to finish it. Lets hope they do more soon.

    Yep lots going on over by Mitchells Cut in Sargent. Go near Shore line which are filled with small holes and pockets in the mud. They are great for eating and scrappy little fighters.

    damn your smoker leaks like hell,should seal it up to get a more consistent temp. They don't wrap in foil to prevent bark,your preventing burning,big difference. Seal up that smoker,and get a diffuser plate you will have a much better smoker

    For about two hours. It should rise in temperature then it starts to decline. I like my Brisket super lean cause I am always on a diet. Use cooler for Ribs and Chicken too. Ribs I put on pit for two hours then two hours in cooler well rapped with sprinkle of apple juice before you wrap them with touch maple syrup.

    Oak wood is used to produce heat......should use hickory with it to flavor it.....mesquite will be very bitter and harsh.....maybe you are doing this...just seen mesquite charcoal,and your mention of oak. But the thing with this cooking thing is whatever you like then go with it.... looks good....

    Yep. Just happened to be fishing and caught him near me when I was working with my camera. Thought he would really like the photos of his boat. Charlie and Ann are really nice and work hard to serve the community. Thanks.

    I have been a Sargent weekender and known Charlie and Ann all my life. My little girl makes me stop there every time we go past their place. She loves Ann! They are the nicest people you will ever meet. If you go to Sargent look them up on Caney Creek and buy your bait from them. They are the first and usually the only place I look for bait.
