    Stop calling it "Canadian Bacon". There is no such thing. Bacon here in Canada is tha same as everywhere else. What you're making is back bacon.

    Netting is quick and easy to tie up the meat. If u do alot of roasts, canadian bacon, capicola, etc, get a jet-netter. It looks like a rocket, or u can use PVC piping, it works as well. 😊

    If you smoke the meat, or cook the meat, use cure#1. If you dont cook it, and dont smoke it, and dont refrigerate it, you would use cure#2. You use #1 to wet brine and NOT #2 CURE TO BRINE!!

    It's much easier to thread the end of the cord through the pulley if you do this: cut the cord to length. Heat one end of the cord with a lighter until it melts THEN: using a paper towel, pinch the melted tip of the cord to form it into a cone/needle. Wait until it solidifies - it will go through the little holes MUCH easier than if you had just melted it and left it a blob.

    I've been making a heavy Baking Soda Brine, for my Steaks, Brisket, Pork chops, and Pork Shoulder. It really make them tender, juicy, and SO DELICIOUS > The pork chops are better than any steaks🥩🥩🥩🥩YUM 👉👉 Plus i did some squirrels into the brine. MADE THEM SO TENDER YUM

    Looks delicious. I’ve seen several different recipes for this dish. Always interesting to see how people make it their own. The original recipe was the winner of Pillsbury’s 1963 $25,000 bake off.

    Silver skin is a connective tissue made of elastin protiens. Silver skin connects muscle groups together give it rigidity and form. When heated the elastin protiens are denatured leading to shrinkage resulting the silver skin to contract. This resultsin the meat to twist and tighten which referred to as called, "This meat is tough!"

    Use .25% in grams of the total weight, water8.3# plus😅 the meat,both in grams. It ends upas 1.1 gram of cure, its the same a.ount for either #1 or #2 cure, so its easy to remember.
