@@delcastilloian liver really gives a different taste but beef itself is already giving this dish great flavor. Simmering it uncovered in a medium low heat until sauce thickens makes it more flavorful.

Dito sa States, Seafood City Supermarket is charging extra $2.00 for upgrade meat they claim. You can buy any sizes of Kare -Kare, then when you are ready to pay, there is an extra $2.00 charge. What is really the right meat to use when preparing Kare-Kare so there is no extra charge added.? The meat in the container has very small amounts of meat in the first place. Then Island Pacific Supermarket is charging extra $1.50. I argued with the store manager, it was not right. Whatever meat is used to cook Kare-Kare should be the meat. I only both the small container because of the sauce, then I bought my own meat with other ingredients. The meat was a joke, two or three chunk pieces of meat. ‘We’ Pilipinos want to support our Kababayan, pero minsan masahol pa sila mag charge for small serving. I prefer to go to Chinese or Japanese restaurants. Today’s date is August 2, 2024, Friday morning in the West Coast, California USA 🇺🇸. Beautiful Pacific Ocean.
I prefer to buy meat at the local grocery stores or costco. It is far cheaper that asian stores or filipino grocery stores.

Made it this way. I used chicken broth since it is what I use in my other way of making this recipe and I used pancit noodles instead of vermicelli noodles it was delicious.

The best seafood I've eaten is in Roxas, capiz, the seafood capital of the Philippines. I watched closely how to make this Heat 1/4 of butter then sautee 1 head minced garlic and 1 sliced red onion. Add 2-3 live crabs fresh from the aquarium, add just enough sprite then cover until the crabs are cooked. Add black pepper, seasoning, and calamansi juice, continue to cook until just reduced. Add oyster sauce, chili flakes and brown sugar near the end, continue to cook until a bit caramelized. Remove from heat and garnish with spring onions. It only takes 10-12 minutes to cook this recipe. Its exceptionally delicious, the best I've eaten so far and I made this recipe myself many times. Note: crab or shrimp can be used interchangeably

Why call it menudong tagalog if you use lemons which is not endemic to the Philippines?
that’s a good question i should have put lemon or calamansi in the video unfortunately we don’t have calamansi in our area we do have in a bottle but it doesn’t taste the same so I prefer to use lemon. I put in my video whatever I used because I only post what I believe tastes good and shareable. Thank you for pointing that out.
I don’t use MSG, so I can’t use oyster sauce. I know anything with msg tastes good, but health wise, I’d rather not use it. Thanks for the recipe.
You can use organic or kikkoman oyster sauce which does not contain msg but yes you do you. You can change the recipe based on your preferences. 😊

I'll share a tip with you to enhance the flavour. 1..After you clean the shrimps. Brine it for 2 hours in salt water. For every 1 litre of water, you add 1 tablespoon of salt. Fry the shrimps only for 3 minutes, not more than required. 2..Use freshly crushed ginger and garlic. if you have a mortar and pestle, make a fine paste. 3..use home made coconut cream. Into a blender add the fresh grated coconut add some water and blend into a very fine paste. Squeeze out all the coconut juice using a cheese cloth. store this juice in a glass jar inside the fridge for 5 hours, the coconut cream will separate from the liquid and float on the top. Carefully remove only the cream and discard the water. 4..into the blender add the coconut cream, some fresh shrimps without the shells and heads and add a handful of kalabasa add some water. Blend everything together into a fine paste. This adds flavour. 5.. always use coconut oil when ever using fresh coconut. 6.. use curry powder when ever cooking with coconut milk. 7.. use freshly grounded black pepper powder. Use a mortar to make fresh powder. 8.. never ever cook on high flame, always simmer and cook. 9..always put the shrimps last and cook it for only 1 minute. 10..finally garnish it with fresh coriander leaves finely chopped. 11..switch off the stove, with pan covered, let it rest for 15 minutes before serving.

Yes you can but adjust it according to your preference as it has a stronger taste than oyster sauce

You can do that or buy a beef broth. For this recipe I used the store bought beef broth
