The great thing about shaders is that the logic is universally applicable. Anything you learn with Unity shaders can be converted to bare metal GLSL/HLSL.

camera should be separate entirely from player facing direction. See GTA SA/GTA IV for proper third person controls. This is kinda like a fake UDK third person, cause you can't orbit the player.
