To get good mortar coverage of the logs. Between them that is. Add a layer of mortar to one side of the log you are placing to the next. It will help fill in those pesky gaps in the logs. Walls like these are always troublesome. Not a first,second or third choice for me. But many choose it. If done right it can be nice.
