Look no further than foil packets! 🥔🌶️🧅🥕 Prep in advance: Thinly slice potatoes, sweet potatoes, bell peppers, onions, and carrots. Slice Italian sausage. Toss veggies and sausage in a bowl with oil, salt, pepper, and your favorite seasonings (I'm using adjika, paprika, chili powder, onion, and garlic powder). To assemble: Roll out a sheet of foil. Place 2 cups of the mix in each pocket. Add 3-4 butter cubes on top. Roll into a pocket. Take these to your next camping trip and cook on hot coals for about 30 minutes, or until the potatoes are tender. It doesn't get easier than that! The ham layer in a wellington is to stop the pastry from getting soggy... Perhaps smoked salmon would have worked for this dish?

Stuffed tomatoes with cottage cheese, dill, garlic and sausage. I continue my series of high protein low carb meals in an air fryer in 30 minutes or less. This time I am stuffing tomatoes with ricotta cheese, dill, garlic and sausage. Air Fry for 15 min and have it for lunch, dinner or even breakfast. And remember: if you can stuff it, you can air fry it!

Ingredients: 2 sheets of Puff Pastry 2 tbsp of Flour 1 lb of Salmon - the star of the show! 6 cups of Spinach 2 cups of chopped Mushrooms 2 cups of chopped Leeks 2 cups of sliced Carrots Oil Salt & pepper - to add some flavor 1 tbsp of Ginger, Lemon Sriracha spice blend 1 tbsp of Dill spice blend 1 tbsp of Liquid smoke - to add a hint of mystery ½ lemon (juice) ½ cup of Fresh dill Egg wash - to give a slick finish Preparation Steps: On a separate skillet, oil up your veggies (mushrooms, spinach, leeks, and carrots) and give them a sauté with salt and pepper. Let them cool down. Remove the skin from your fish. Use a life hack and pour boiling water over it to make it slip off like a boss. Season your fish with the spice blends, liquid smoke, lemon juice, fresh dill and give a little spray of oil. Roll out the puff pastry and make a stencil in the form of your fish. Cut out both sheets. Place one of the puff pastry cutouts on the baking sheet and layer on the veggies and fish. Cover with the remaining puff pastry sheet and seal it up like a wrapped gift. Get creative and make a fish eye & scales from the remaining dough to make this fish look as realistic as possible. Brush the dough with the egg wash and send it to the oven for 20-25 min @ 400°F or until the dough is golden brown. Enjoy your Fish Wellington

Potato cheese and ham waffles. Did you know you can turn boiled potatoes into waffles? Just slice 'em in half, stuff 'em with cheese and ham, and toss 'em in the waffle maker. All you need to do now is get creative with toppings. Go wild with yogurt, zhug sauce, eggs, and a sriracha drizzle. Enjoy!

I added grilled corn…which goes really well with this dish…but instead you can add more tomatoes to make to more tomato based sauce…similar to Cioppino.

Not a bad idea, but pineapple does have enzymes which break meat down, so I dunno if shrimp would do well with that. Good for steaks though.
