You said the mustard must have vinegar in it...why don't you take a couple of tablespoons of mustard mix them with vinegar to taste so you do not put too much vinegar, get something like the "from the store" mustard with vinegar. How long will the pattern last? Anyway you have to put oil on the blade.

This looks like a Tops Felony Stop without sharpened top edge and shorter amount of jimping all the lines are the same wouldn’t call this a one of design
