Ive been looking for this since college. My Dominican friend's mom made this when I went to visit and we ate it with fried green plantains. 20 years later I still can't forget it 😅

For my family reunion this weekend, we are barbecuing beautiful strip loin steaks. I offered to make the potato side dish (for 25 people.) I decided I’ll try twice baked stuffed potatoes, although I have never made them. I figured I can make them a day or two ahead, and reheat them on the day of… for the 2nd roasting. Now that I’ve seen this video and the sweetheart who created it, I’m more than excited to use this recipe and method. If I have time and remember, I will post some pictures here in the comments, once complete! As always, I won’t follow the recipe… I will use sharp, white cheddar, fresh chives and parsley from the garden, and some good bacon bits in the mashed potato mix in addition to the ingredients listed. Yum! I want one NOW!
