I think I got it! I tried with a coin (denser than clay which is what poker chips are made of). What I've found was that the coin, never really spun in a c shape like that (usually it goes straight forward and does a tiny circle) which makes me think that the table/cloth is either curved or he's making a kind of path for the chip to spin round. It's relatively easy to predict where the coin lands with a few tries, once you keep the starting position consistent. You can see that he also repositioned the two cards on the left just before he span the chip which makes me think that he's practiced it multiple times with that as the starting position.
