  Technically "ADOBO" is cooked with a salty and sour taste which is that is the original. My father teaches me this way because long before, adobo is the oldest method in Filipino cooking because its salty and sour blend can preserves the cooking for days. Only time time goes by when Filipinos experiment in such method. Others put coconut milk and let it simmer. Others put pepper to get the spicy taste. Putting sugar in adobo is only a young version for this. It's not that i disagree, but i love the sugar method. Still, i preper the authentic.

  The decoction is not right. I can tell from the color and consistency. And what that 'part you didn't understand' action does is cool the coffee. Normal it's served in metal vessel.
