Guys... The steak cooking thing is killing me. Here is the secret: Set an oven to its lowest temp, probably 180 or 200 for most electric ovens. Let your steak sit in the counter while the oven preheats. Pat the steak dry and season with salt and pepper. (If you have it marinated in something, that's cool too.) put a cookie sheet on your bottom oven rack. Put the steak on the top rack, middle slot. Cook until the steak is 105* - 120* internal temp. 105* is rare, 115 is medium rare, and 120* is medium. Place the steak on a rack and cover loosely with foil to rest. While that rests for 10 minutes, get your cast iron or frying pan ( NO nonstick) on the stove and turn that shit on high. Add some oil, and throw the rested steak in the ripping hot pan. Sear on each side until you get a nice crust. Throw some butter in, and if you're feeling bougie add some thyme, rosemary and garlic. Baste the steak in the herbed butter for a few seconds per side and plate. You'll never go back. It sounds like more hassle than it is.
