Your on the right track. We used to do a thick S4S finished cap that backed to a shop ply cleat and now have done miterfold "L" cap for about 5 years now. I like your 2 groove reference for scribing to the ceiling. You could eliminate the rabbets using a stacked block of the same thickness as your cap bottom. Overall looks to be a sweet system.
