Recipe states 8 cups of tomato sauce and 8 cups of ketchup. Did you mean 4 cups of each???
It makes a big batch, 8 C each. You can cut in 1/2.
I used to have a similar recipe that I'd lost years ago and forgotten about. Baste with the dijon/brown sugar mix, wrap it tightly in foil and bake it til tender. It was amazing. Thank you for the reminder!
How did this turn out? Was the tomato’s mushy? how long did you wait to eat it? Would you do this again? & is there anything you would change?
They are cooked so yes to mushy. I also add in cooked dishes or in pasta salad. I prefer fresh tomatoes for bruschetta.

Nice recipe to offset the salty flavor. Although I wouldn't use Aluminum foil w any form of acid. Acid and Aluminum is a no no. It can cause a reaction and cause stomach issues. Use parchment paper when using lemon, vinegar ,tomato or anything that is acidic. Even an Aluminum pan or pot can cause stomach distress

I'm not crazy about mustard, but brown sugar and a little apple cider would be really good.
That looks amazing. Tomorrow night will be my first year cooking the corned beef in the oven, I'm definitely using this technique, best I've seen by far.

One cup in cooker then top with one cup at the end.

Why not put the pepper in with the marinade? Brushing the marinade tended to wipe off the pepper!

If may just be the camera shot but it looks Really dry, not gooey.
It was a thicker consistency but was not dry. Can add more broth or cream if desired as well.

This is the 1st time that I see someone that do canning almost every day. I do lots of canning as well. Do big amounts of canning. But I do not can any type of meat.
