I'm thinking what the best shape is: open-center, no-central-leader cup or 2-levels tree with 5 branches in the 1st level (knee-height level), and the 2nd level consisting of 2-3 branches 2-2,5 feet from the previous level. Why my Slavic big orchard growers prefer the 2nd one? And which style I, an owner of 5 small cherries, should go for?

I bought 3 cheap home depot 3-year old cherry trees without understanding tree structure. The tier of branches on them start 5 or 6 feet of the ground. I am leaning towards cutting them to the height of 1,6 feet of the ground. How do i help the trees not to die? Wound seal/dressing? Spray with Bordeaux mixture? Im hoping to notch in 4 directions to create 4 branches and spray with the gibberelic acid i've learn from this video. Im just afraid that i won't see any buds under the stump or there will be few of them. What outside temperature would you recommend to perform such tree heights shortening procedure? Thanks so much! I am in Central Coast California. I planted about 6 months ago a semi-dwarf Craig's Crimson cherry tree (about 4 feet tall). One of the side branch grew really high comparing to the others. Is that normal? That branch grew in the past 6 months about 2 feet. Should I cut the branch about 1 foot (half the size it grew) pointing a bud outward? The rest of the branches grew maybe a couple of inches, if that. All leaves are gone now except on the highest branch there are still 10 - 15 leaves, but becoming red (because of the weather). Do I need to wait until they fall off completely on their own and then prune it or can I prune it with still some leaves on? Also, I was told that I might need to wait for 2 or 3 years to get first cherries, is that correct? Thanks
