Katie if you used pasturised eggs and powdered/icing sugar in place of castor sugar then you can make swiss meringue buttercream without going through the whole process of heating the egg and sugar mixture. Just start with mixing pasturised egg whites and icing sugar and once it reaches the perfect consistency mix in the butter

I've seen people use parchment paper as piping bags. Make it into a cone shape first and then put the frosting.

Your work is so delicate and precious, it pained me to see you put your cakes into a "to-go" takeout container. A small cake box would add so much value to your work and elevate your creations. Someone once told me "it's all in the packaging". 🙂
