I don't know what that chemical you're spraying is but, I bet you're not supposed to be consuming (feed to your customers) it. Plane water does the same thing.

I just use water on the hot grill, scrape down (maybe twice if needed.) wipe it with a clean cloth, and reapply a light coating of oil. Dane. Takes 1/4 the time.

Not bad. Just started a new job, and there's this ancient flat top. I can get it to look brand new with my method, but I'm struggling with sticking the next day. I'm using the keystone Fryer/grill cleaner from sysco. Work wonders. Let grill cool down some, apply this and let it sit. scrape, wipe with white vinegar, then polish with olive/canola oil blend. Last job I did this as well, and never had any issues. So I don't know what's going on with this one. Though in my experience so far, I've had to find a new method every time i go to a new kitchen. Last job I also had more time to let cool down and let it do its job. I've got an hour to close here, so a lot less time. Any advice would be super helpful

Yes..... cleaning the flat top in this method works,,, chemicals and lemon juice do add up night after night.... But i prefer the simple grill brick... Cheaper and i can get the flat top just as clean without spending cost...
