  I have seen "Quick Set" or "Fast Set" or "Rapid Set" mortar mix used for this on other YT Vids, rather than concrete mixes. Small batches, a section at a time, so it doesn't set before you finish the design. Many are looking for a mold or template but I think the free-hand projects seem more authentic. The mortar mix seems more "plastic" than my regular plaster mix and definitely creamier than any concrete mix that have used. To your question, use ready-mix and just add water to a thick consistency, not too runny.
