    Yeah! I believe it’s very possible to get tasty coffee out of these cheap drip machine! As you have already experienced! I do think it’s in the grind and going for a medium to dark roast. From my continued assessment, the temps are still low and the sweet spot will be in a finer grind.

    Yep. The common likeness/love of coffee is what connects people. Regardless of what we like about coffee. The difference we can fuss and defend our points, but we can learn from each others experiences. And hopefully eventually, we learn other things that we realize that we also have in common about! And it started with coffee!

    I was enjoying a coffee in my favorite red cup when your video came on. I made it out of Brazil Sweet Blue coffee beans I got from my favorite roaster. I weighed out 19 grams of it for a double shot first thing and ground it up in my modded Baratza Encore that sounds a lot like your grinder. I only ended up getting 18 grams back this morning which was unusual, but I still dumped it in a portafilter, gave it a stir with a WDT tool, and spun a coffee distributor over top. I choose not to tamp the coffee. I've been skipping that step more often than not lately. I put the portafilter back in the espresso machine and ran it until I had 44 grams in my cup. It took a bit longer today than I figured for a slight underdose, around 50 seconds. Not my best pour, but it still looked thick, caramelly, and delicious. Normally I would just top it up the cup with hot water and enjoy an Americano, but lately I've been liking the taste of a cold lattes in the morning due to the summer heat, so I poured a drizzle of maple syrup in the espresso, swirled it around, and topped it up with cold milk. Drinking coffee is one the few things in my life that causes regular appreciation and self-reflection, and so I'm glad to see your video this morning and share that same sort of mindset with someone else for a change.

    That is great to read! It's true, preparing coffee in the morning really does help. Alot! It is also cool that even though your brew didn't go to normal, it was still enjoyable. I have to keep telling myself that from time to time. Question, modded Baratza? Please tell me more!!!!

  • @PandaPandaPandaism

    @@everyday-beans I had my Baratza Encore before I bought an Espresso machine so I had to modify it for my new workflow. There are two mods I know of, one is a stepless grind adjustment. There is a small piece of plastic you can remove that causes the clicks at each grind setting. You can search for "stepless mod" to find more details on how to do it, but it allows for finer adjustments. The other mod was to recalibrate the burr set. There's a tiny adjustment screw on the bottom of the burr set that lets you recalibrate the Encore to grind finer. Both those mods make the grinder Espresso capable, but Baratza now makes an Espresso version of the same grinder that is still capable of drip, which is nice so you really don't need to do that anymore unless you're cheap like me and don't want to buy a new grinder.

  • @everyday-beans

    Looking delicious. Trying to find the simplest most delicious way to brew our (my husband and my) dark roast coffee on the road! We love dark, strong coffee! We love espresso, in Americano form. I have a regular cuisinart coffee maker that I have learned to make good coffee on, but too big to take with us, and I’d prefer to use/do something that I can make with hot water on our propane stove..French Press? Pour over? And we each like to have/drink a 12 oz cup at a time. Coffee is definitely worth effort, but the less the best… 🙃 Any ideas?🙏🏻

    The thing I've wondered about blooms, that had me clicking into the video, is: Do they matter for immersion brewing methods? These days, I'm using mostly Aeropress, or Hario Switch, both of which have an immersion phase. I see folks recommending blooming those, too. And I wonder: Does it actually serve a purpose, when the grounds are going to be left immersed for minutes before draining? Is there something the bloom is doing that soaking won't also do? It did jump out at me how "pebbly" the coffee beds looked in your 3 V60s. The last coffee video I was watching before this one was the recent one from James Hoffman, where he compares a cheap-but-well-reputed hand grinder to an even-cheaper one and a more expensive one. And that guy has all the kit. He takes the grounds from each grinder to a particle size analyzer, and he's confused at first, because the mid-priced grinder that's performing almost as well as the high-price grinder is producing a ton more fines. And he's expecting that to throw off the brew, make it more over-extracted. But the good thing he notes about the mid-price grinder is it also really avoids the big chunks of barely-cracked coffee. So in the end he was speculating that maybe excess fines in the grind aren't as bad for flavor as he'd thought, and that avoiding big chunks was more important. With that thought in mind, from having watched y'all's two videos close together, I have to wonder what would happen if you repeated the experiment with a finer grind setting. Not an espresso grind, but not as chunky as what you were showing, either. Edit: Adding a link to the Hoffman video kzread.info/dash/bejne/d4SWuLeLZryeY84.html

  • @everyday-beans

    You bring up a very good point about immersion brewing methods. I don't think it matters that much. I will, in the future, do a video on how immersion brew contact time plays a role in extraction and do it in a way where I base it off of time. But I would also think that after awhile, I would assume that with flavor, it will be a law of diminishing returns because I could see that the flavors with longer brews may become bitter. But I'll keep you posted on when I do that video. I do feel though, with my limited uses of the Hario Switch, it does really well with providing extraction with the hold function and then of course finishing up the brew with one to two or however many pours you may have with your recipe. I will also try with a finer grind, too. That will be interesting to see if it is alittle more consistent with extractions. You got me thinking, I may play around with this on my EK 43. That will tell more of a story. I don't want to compare my daily Baratza grinder with the EK 43 that is mainly used for batch ground coffee orders. But that will bring an interesting take and produce fines that are more consistent! Yeah, I'm not going down that rabbit hole as James Hoffman has with the particle size analyzer. But I think having the tools that I have, I believe I can provide something to all of you all, if it helps any. If there are any other experiments you can think of, send them my way and I will start from there. I will be touching on the Hario Switch in the next couple of videos. I think that brewer is truly a game changer in any one's coffee journey.

  • @SaintBrick
    @SaintBrick2 ай бұрын

    I wonder how much of this is just a function of how long the coffee is interacting with the water. The longer you bloom the more time there is for things to disolve into the water. I wonder if doing a bloom, then pouring half your water and waiting again. Like a... "mid bloom"? would do anything. Might just get over extracted coffee? Waiting for a french press and grinder to show up myself lol.

  • @everyday-beans
    @everyday-beans2 ай бұрын

    Yes. I believe it's more about the longer time than anything. It did increase the extraction, which makes sense. I'm going to try that mid bloom approach this morning and see how much that does something with the extraction compared to the 30 sec bloom. I will try it on the Hario V60 switch, where I can easily isolate things and report back. What kind of experiments will you be doing with your french press!?

  • @everyday-beans
    @everyday-beans2 ай бұрын

    @SaintBrick I just did the experiment! The brewing recipe that you mentioned ("mid bloom") measured a TDS of 1.33 and the 30 sec bloom measured a 1.39. So the bloom still produced a higher extraction. Yes. I believe that is the case, the longer it has time with the coffee, it extracts more.

Or do 80 grams of coffee to 1 liter of water (you may or may not have to still dilute it to taste). Try that out and let me know how it works.

    The French Press does not get enough love these days. I tell people again and again, it's one of the best brews you can get. But why do I use it? Because it's relaxing. I like an excuse to grind coarser, it also looks good on the table, the pressing action is satisfying and I can make coffee for 2-3 people if I need to. The ritual of making coffee is as important as the taste of the coffee itself and the French Press is very low stress and I feel less pressure on myself to "get it right". With good method, the results from the French Press are just astounding. Personally I appreciate the soft texture of French Press coffee, and you're right it does blend the notes together but I like that. At home everyday, I use an Aeropress and a French Press. That's it. That's all I use. And in my experience, the Aeropress has a slightly more stressful ritual but produces very sparkly glistening bright notes from coffee whilst the french press brings out all the low notes in coffee and blends it all together. Both methods equally valid with different results. I think both brewers compliment eachother, I just decide on the day what I feel like using. In a lot of ways its like comparing CD to vinyl.

  • @everyday-beans

    That’s really cool of your insight and preference. It is very simple to use, it’s just the flavors I get from it aren’t my fav. But you bring up a really good point, an excuse to grind coarser. That gets lost a lot in specialty coffee. And yes, whatever you do, the ritual is just as important as the coffee drinking part. Thanks for your perspective.

Keep in mind I did try roasting another Ethiopian, this one Naturally processed, and surprisingly was the best coffee I ever roasted. Second, I did see that this was from a 2022 Harvest period. The one Ethiopian I felt was difficult was a 2019 and first roasted in 2022. Perhaps age can play a big role with these high altitude African beans? Have you tried any other Kenyan greens from a recent Harvest period?

    I just found your channel today and as a coffee roaster I can agree to most of what you are saying. I don’t think that the “loud mouth” Kenyan coffee is really trying to compensate for defects by doing a double ferm./wash, instead these processes are intended to highlight the coffee and its particular profile from that harvest season. There is a variety of factors that could go wrong in the process and maybe you are right, the farm maybe had a bad yield or not as good as the year before, but many other things can go wrong post process all the way down to the barista’s brew method. Best bet is to check with your source to see if they offer a grade score. Was this graded by them? At the mill? Or post import? (Exporters can also make mistakes) anyways I do wish you luck in finding your unicorn coffee and may your next bag be surprisingly a better value. As far as the Brazilian coffee, you got me interested. Will have to give it roast. If you don’t mind sharing more info on it ;)

    Thanks for commenting, @rollerball! I haven't really thought about it that way as you mention that they are probably trying to highlight the best part of the coffee. I'll take that into consideration as I keep going through my journey. But you are right, the whole "seed to cup" journey is critical. The company I order my small batch offerings from are really good at providing the freshest crop they can, but still, things happen. They don't usually provide a score, which is interesting. But something about this Kenyan didn't seem to gel with my palate. I will freeze some and giveaway the rest, stay tuned for that! Oh yeah, the Brazilian!

    I met a consumer magazine journalist a few weeks back, that runs the articles on supermarket coffee. She told me they stopped using an expert panel, and are only working with a consumer panel as their preferences are too disparate. My feeling is, as I am on this journey too, I slowly start to develop the expert preferences over time, although my tasting holy grail is still sweet almond. Good luck and enjoy the next steps in your journey ;)

    That's extremely interesting, @cricocoo. Yes. I believe as we go through our journey, no matter what the vice is, we start to pick up on things just as the experts do, too. But our palates and life's are different that bring out our unique preference in things. Good luck to you also on your journey!

    It started to go downhill when Folgers Instant changed its packaging. I switched to Maxwell House and it tastes pretty good even when its been sitting in the Mr. Coffee decanter for a couple days. The flavor has some "bite" to it and you can still taste it in your mouth when you go to bed, even though you drank it during lunch. It stains the teeth some but that's the pride of coffee. I know the coffee snobs use those Keurig machines where you can do espresso, cupachino, mocha, as well as regular coffee just by using different keurig cups from the grocery store. But, I think my Maxwell House instant crystals look just as dark (almost black sometimes) as what I see in them fancy brews.

    That is too funny! We all have our preference! Some more or less extreme than others. But that is still subjective!

    Should of bought Jamesons, Bushmills is protestant whiskey. The Irish will put Whiskey in anything they are a nation of alcoholics.

    @@everyday-beans Haha, was only kidding, it's a scene from the show 'The Wire' where McNulty refers to Bushmills as 'Protestant Whiskey'. The Irish aren't whiskey bigots by any means haha. Not many people know that the Guinness family were also Protestants with some very questionable history (Ireland being a very staunch Catholic country), and it's Ireland's national drink 😄 Keep posting pal, brilliant content 👍
