Mom's family is from Naples. I'd never heard anyone in my family call capicola "gabagool" until I saw this show. Is it a New Jersey thing?

NJ and NYC. That particular dialect of Italian that permeated culture in the area has to do with the fact that most of the Italians that came to the US in the 19th century (which mostly settled in that area) were from Abruzzo, Campania, Apulia, Basilicata, Calabria, and the island of Sicily, owing mostly due to poor economic conditions in those provinces at the time. This migration skewed towards the least educated people of these provinces. Add in a century of language drift to that, and you get the modern Italian-American dialect, which is much more slurred overall, as well as dropping a lot of trailing vowel sounds off of words. In the case of "gabagool", all the consonants are the voiced equivalents of the consonants in "capicola" (c->g, p->b), along with that final "a" vowel being chopped off (the latter also affects how Italian-American dialect pronounces "mozarel" (mozzarella), for example). Naples would recover significantly after WWII thanks to Marshall Plan aid and the Fund for the South (after being one of the most bombed cities in Italy during the war).
