I made this without caramel sauce yet the taste is still good! I wonder why my cheesecake doesn't seem to be as smooth as yours, does it have anything to do with me under / overbeating the cream cheese batter?

Why you skipped the video at 1:38 place? The second before 1:38 the egg white still looked soft and watery but right after 1:38 it became foamy. I was hoping to see the whole length of egg whites beating without any cutting and editing of the video. Disappointed.
This was the way my grandmother always folded it! Thanks for sharing, now i can fold it just like grandma! I had to look for this folding video because most of the zong videos fold it a different way.
