    Nice video, but you always wash the meat, it sits in the blood for at least 24 hours. Wash it off with salt as vinegar. Then proceeded with the salt and vinegar. But other than that looks good. And always wash your utensils, board and most of a!I your hands with not soapy water for at least 20 seconds. Florida USA 😊Rainbow 🌈Chef 😊🙏🙏👍👍👍👍👍

    Looks great. These whiners on here never been in a commercial kitchen. I did refrigeration 40 plus years and serviced some top restaurants...UNBELIEVABLE..They're whining about this and that etc....what about when the walk in freezer was out all night,or cases filthy and running warm because they're so busy,stuff left on floors.. But guess what...great food😂

    Your roast looks good! I can't beleive you did not wash it off before working it and cooking it. You should always wash your meat before you prepare it. You don't know how many people have handled it in the factory or in the store. This goes for all meat!!!!

    AMAZING!! Is it possible to cook this in a Dutch oven for 8 hours with the lid on at the same temp?

    Yes, it will cook faster with a lid but the skin might not get crispy because of the extra moisture. Leaving it uncovered for a few hours might be a good compromise

    Does it matter if your picnic ham is smaller than that it's still 8 hours that low temperature?

    It will cook faster but hard to give an exact time. Maybe check 4 to 6 hours in.

    This is a good technique video but why ruin the amazing taste of the lobster with all that garlic? Lobster has too delicate a flavor doe all that garlic.

    IDK that's 6 to 7 minutes under a broiler. Seems way too long for lobster. Steaming would only be 8 minutes max and that's much less intense heat that broiling. Same for grilling, 6 to 8 minutes and a grill is less intense heat than a broiler. I don't know, I've never broiled lobster, but 6 to 7 minutes seems like too long and would result in the dreaded "chewy" or "tough" texture.

    Apologies for being a dick, I'm just doing this tomorrow for valentine's day. I've roasted many a lobster tail. It's a solid method. Especially the sauce. Absolutely fantastic. If you have a better method, well then we all would appreciate it now wouldn't we? Perhaps a minute or 2 less in the broiler? Let us all know what you come up with.

    Every broiler is different. I would check every few minutes if it runs hot and you're worried about overcooking. If it runs cool, you can always cook longer
