I started this channel as a way to deal with the grief of my mother’s passing, a lifelong love of baking, and a way to be productive during the pandemic.
I do not make ANY MONEY from this channel (or my website ) by choice. That would be a job, and I’m retired.
I’m just a non-professional home baker, (I bake mostly breads, but also cookies, pies, etc..) who enjoys helping other bakers. I typically bake bread by making dough in bread machines and I bake in my ovens. I also make cookies, brownies, and pies.
I’m a retired elementary school teacher of 30 years. Now I teach my “bread friends” how to bake bread successfully using a bread machine.

Thanks I have no talent at cooking but I’m learning I have made three bread loafs so far and none have come out correctly so I’m using your techniques this morning see how it comes out - and also my bread always has a dent in the middle
@@treystokes2011 the dent in the middle is what I call “butt bread!” Your dough was a bit too wet so it didn’t form a smooth ball of dough. I’m Glad you watched this video because it will help!! Let me know how your loaf today turned out.
All you need now is a garden-fresh tomato and your favorite mayonnaise (mine is Duke's) for the best tomato sandwich ever!

I love powdered milk for baking. I don't drink milk, so storing perishable fresh milk just for baking is usually a waste of money for me. Also, for bread machines that don't have a rest or preheat cycle, usually the kneading process itself creates enough heat to melt butter.
@@JMcKey21 it’s a good option if you don’t keep milk in the house. I always have Half and Half for coffee so that’s what I use.

I'm anxious to try your Master Butter Dough recipe soon. I can't have milk and I notice a lot of your bread recipes call for whole milk or half and half. I want to attempt to use your recipes with coconut milk or any other alternative milk product. Any suggestions?
@@lindahansen9395 it will be trial and error. Lots of my recipes are without dairy: bagels, rye, challah, French bread loafies, pumpernickel. Challah would be a pretty good sub for Master butter.
How do I measure in grams? This is new to me.

Great rule of thumb. Does a bakers precentage apply? If I do a recipe with 13% sugar, for hamburger buns. It has 160 grams flour. I would love to get a larger rise out it but not sure if the gold label would make a difference. Thank you.
I have actually not learned how to use bakers percentages. I tried and was so confused. Every recipe of mine had a different amount of sugar based on taste. The gold label definitely makes a difference for me!
Hi Ellen, Love your informative videos.. have a quick [ elementary] question please..... some videos that I have seen say to use warm liquid but, I haven't heard you say either way .. warm liquid or room temp, ?? Thanks for all the great advice & tutelage👍👍👍
@@peggyash4419 I say it sometimes. My machine has a rest that slightly warms at the very beginning so I can put in cold liquid, butter right out of the fridge, etc. I’m Glad you enjoy my videos!

I weighed everything but didn’t warm the liquid 🤔 but now thinking I must have missed something… If at first I don’t succeed… I am going to try and try again 😉 Thanks again

I have just recently purchased a new Zo Virtuoso and have made several recipes that have turned out great but when I was using the dough cycle for hamburger buns, my dough felt great but didn’t rise well so was puzzled … so I was thinking of the temp as my dough was rather cold when I turned it out
@peggyash4419 the Zo has the rest (about 23 minutes on dough and 31 minutes on white) . Is your kitchen cold?
So a good hydration ratio dough will pretty much always be smooth and round out of the machine? For long fermenting wholemeal sourdough in this case

This video appears to only show how to find the ingredients for the recipe but not the full recipe.
@@rcollins911 there is no recipe for this video because I didn’t make bread in this video. In this video I explain what I am about to tell you which is how to find the recipes.I announce in every video at the beginning where to find the recipe. You look under the video to find the description. You will likely have to click on “more.” You’ll find a link to the recipe pdf in the description. It’s very simple. I hope this helps. I finally bought a small Pullman bread pan with a cover and will use the dough course on my Zojirushi one-pound bread machine. My machine's dough cycle rises the bread twice. Does that mean I can skip the rise in the oven, or should I still do that? Also, my manual doesn't say how long and at what temp I should bake my one-pound loaf. Should I go with 30 minutes at 350 degrees, the same as a larger loaf? Should I coat the pan with butter, or will the butter burn? The pan says not to use a spray.

[email protected] You still have to do final rise after shaping into the loaf pan before baking. I use 350 for white loaves, 375 for whole grain. No butter.

Somebody please help me: I have a Tefal bread machine, i tried to make bread 16 times, and it is still solid (dough doesn't rise) unedible, tastes yeast. I tried different type of ingredients (yeast, flour, even salt and water) and recipes. Temperature is 106F, good. Tried to make it wet and dry, other programs, not really changes. I have run out of options, and getting crazy.

@@mt7427 I’m so sorry but I don’t do sourdough. I tried all that feeding and discarding for about a month. It was the stickiest mess ever and it smelled like vomit. Into the trash it went and I never looked back!

Only this blogger said how the Zojirushi BB-PDC20 really fanction. I bought this bread maker. So, I added everything in and closed lid, choose cycle #1, pressed Start, waited 1h30 minutes and machine was not working, was cold as dead turkey. Checked all videos and did not know whats wrong??? I repeated it several time and did not know that wait time is only 10-15 minutes. I will exchange machine. Thank you for good and explaining video!

Ellen, the 2lb loaf - do you have any idea how many bun or rolls you might get. I just made the 2lb for hamburger and hotdogs. I didn’t know how big the bun dough should be(my first time). I think I over worked some of my buns and they didn’t rise much. The dough was beautiful and I can’t wait to do cinnamon rolls. Happy Independence Day
@@judyblaise1639 I was getting 8 large or 10 medium sized from the 1.5. I’d say 10.Next time no kneading! Just weigh dough, divide by 10, weigh. Make balls, smash. I just did it and it should be perfect.
I only have active dry yeast. Can I use that?

Ellen, do you think I could use my freshly ground flour in place of the white flour as long as I weigh everything OR….use 1/2 freshly ground and 1/2 store white flour maybe?? Curious as to your opinion. I can try it, of course, and I will. Basically would appreciate your thoughts. Thanks.
@@robininva I do not mill my own flour. All I know is that it acts differently and you will have to experiment. Also it depends on the wheat berries. Hard red? Hard white?

Place a long cake pan or tin pan over the griddle helps make an oven effect! That's what I do! Jeannie

I noticed at 32:48 that your cutting board wiggled around a lot. A trick is to wet a wettex, squeeze the water out and place it under the cutting board. That way it will firmly sit in its place helping with the cutting.
I usually put a silicone trivet under.
Do you think this can be made with gluten free 1 to 1 flour?
Unfortunately you cannot just substitute gf flour for regular when making bread. Gf baking needs a different set of ingredients. I do, however have a gf cinnamon roll recipe you could make monkey bread with I think.Ooey Gooey GLUTEN FREE Cinnamon Rolls kzread.info/dash/bejne/gmVtrpOncZm-p5s.html You can use gf flour to sub for cookies and brownies. I’ve done it several times.
