Thanks for a new treat idea, I am going to make them for my friends on July 4th. For some reason I don’t like hot cream cheese and meat so I’m going to use cheesy polenta instead. A tried, tested and approved thing I have done with bacon wrapped jalapeño poppers.

Picanha is better than brisket, if cooked to medium rare. I personally wouldn't do a long smoke on one.

It looks a bit dry to me. Maybe lower the temp to a very low heat for longer and moisture form time to time with apple vinagre.

Man there is not enuff good things i can say about this recipe. Im really new to offsets but i gave it a whirl. I did have it at 260 for the first whike but then it got windy and i got into trouble so most of the cook was at 200-210. Didnt seem to affect things tho and boy was this the juicyest thing ever. Will definitely be making this again

Love cooking whole slabs like this slow. You can miss your target temp by 10 degrees and still have tender juicy piece of meat.

5:25 the constant spinning of the grill grate, is that so the grill grate doesnt get too hot and skip past maillard reaction and burn the meat?
