As a Filipino who has never been to America, Filipino food should be a daily homecooked meal instead commercializing it. Filipino food is much better to be eaten at home tbh

Filipino food culture is a rustic/homemade food culture. Even here in the Philippines, the best Filipino food you'll get is from people's homes or from decades old low end to mid end cafeteria style places. I don't think there's any succesful fine dining Filipino food places here in the PH. Even the wealthy people here would rather have their home chef's cook Filipino food at home, or order food from a caterer, but it is always homemade style. During Fiestas the best cooks of the family or the neighborhood would all gather and join forces to cook for the entire neighborhood. In modern times these people became caterers that offer party trays, and you'll only discover them through word of mouth. We even have a specifc term for it "lutong bahay," (cooked at home,) as opposed to the more commericalized style like Max's. So that's where the suspicion against anything too fancy comes from. When Filipinos eat out we eat other cuisine's because what's the point of eating Filipino food if Tita Baby can make it much better at home.a

another factor is, on a home cooked setting all the money you are spending goes to the food (bigger chunks of meat, twice the amount of garlic, cooked for far longer if it's slow cooked, and no short cuts) On a restaurant setting, part of the money you are spending goes to wages, rent, utilities, and profit. Plus, some short cuts are necessary in a restaurant context because you need to be able to serve the food in a reasonable amount of time. You can spend more on better ingredients and bigger portions at home.

Not true, Filipino food scene in the Philippines have been popping, and I’m not talking about the restaurant or high end Filipino restaurants. What Filipinos eat are never in America. Filipinos don’t go outside to eat adobo, we make that at home, we go to restaurants that focus on one thing and one things only. For example, Filipinos go to Inasal places, Batchoy, Palabok, and Pares. These is where Filipinos go to, Filipino in the states haven’t even heard of that type of food.

Why do people think that Jollibee is Filipino food? It's not. Just because it's a Filipino brand doesn't mean it serves "Filipino food". They serve "Filipino-style" food, like Filipino-style spaghetti and Filipino-style burgers. ChickenJoy IS NOT Filipino fried chicken, mainly because gravy for chicken has never been part of Filipino cuisine. Gravy for chicken was popularized in the Philippines by KFC in the 60s, with Jollibee following in the late 70s/early 80s. Max's fried chicken is the real Filipino-style fried chicken. Also, Filipino cuisine is influenced by so many cultures that it's hard to pinpoint dishes that are truly Filipino without any foreign influence. I'm Filipino but I don't think Filipino cuisine can ever be considered "one of the best cuisines" in the world because it's very inconsistent and unstructured. I've never been to Kasama but just because they have a Michelin star doesn't mean they serve the best Filipino food. Michelin stars are given to restaurants because of several factors, not just the food.

What makes it difficult for Filipinos to put up a Pinoy restaurant? For me is the way we cook em. Chinese cooking is the easiest. The reason Chinese buffets are all over. Stir fry beef is one dish. Broccoli beef is another dish. Filipinos boils the meat with aromatics to tenderize the meat. So it takes longer. Fine dinning is the best way for Filipino restaurants than buffets. My only issue with that is Filipinos are the worst and mean critics of their own dishes. I love fancy Filipino food, but does it taste the way it should taste? Or just to crater Western taste.

Good or bad, any publicity is good publicity. More and more people are tuning in to Filipino cuisine and there's a lot to discover outside Jollibee, adobo, pancit and lumpia. Talk about regional dishes. But this is a good thing because people are curious. It's our time to shine in the world stage of cuisines! Wooo! Jollibee is 🔥.

see, i got introduced to Filippino food by None of those examples. I got introduced to it back in 1988 at my first duty station in the Navy in California. i just got there and was in the transiate barricks until i got to my squadron, and it was after lunch so the galley was closed and the filippino house keepers gathered in the breakroom for their lunch when i got there. was going to vending machine, they asked if i just go there, i said yes, those Titas/aunties gathered a bunch of stuff on a plate and handed it too me and i have been hooked since. i love those ladies to death to this day for putting me on to filippeno food🥰
