  The way I see it, Logan is Rory's Christopher kind of. Both wanted to marry Gilmores but the Gilmores rejected but regretted and probably had kids with them. Only in Rory's case I want them to be together.

  Because he had 'ideas' for their life and it scared her and instead of talking about it- she said no. their is this toxic mindet that getting married stopps your life- but this is for toxic coupls- not the default option. I think she also knew her mother really wouldnt approve - she lived most of her life on her mothers terms.
