Just Cook With Dustin

Just Cook With Dustin

I love cooking and preparing meals for my friends and family. Now is the time when I want to start creating something of a digital family cookbook of all the things I have learned to cook over the years and during our travels. I hope that you will subscribe and come along with me on this new journey.

Before becoming a stay at home dad I worked in the wholesale meat business for 11 years, and as an English teacher in Japan for 3 years. My wife and I have lived in some amazing places.
Phoenix AZ, San Francisco, Temple TX, Durham NC, Maui HI, Riverside Cal, and Chiba Japan

I look forward to sharing with you some of my favorite foods from these places.

    I would avoid putting that much raw flour on the top of the dough then folding it into the dough. That flour is not gonna be hydrated like the rest of the dough. Use as little flour or none at all before folding in the dough. The crumb is so dense in places, I think it is mostly due to that.

    HINT: I made this today. Im a useless baker! I added a second tsp of instant yeast, 2 tsp sugar to the very warm water, waited until it bloomed, then poured in slowly into my mixer, to form a doughball after a few minutes. a bit of flour on the counter to form it into a drier ball, then into a corningware bowl with wetted interior sides, plastic wrap on top then a doubled tea towel on top. placed on a cooling metal grid suspended 1 inch over a warming burner on the lowest setting for 30 minutes, then shut it off. rose very well (hard to get anything to rise where i live its high n cold here) in the 3 hrs. after 3 hrs, depuffed it, baked as recipe. turned out very well! im kinda shocked!

  • @justcookwithdustin5678
    @justcookwithdustin56782 жыл бұрын

    Thanks for asking. 30-45 minutes. When you are stirring the pot you want to be able to see the bottom of the pot for a split second. The time will vary based on the moisture content of the tomatoes. Or let it cool for a bit and if you’re not happy with the consistency of it put it back on the heat and continue to let it simmer for another 10-15 minutes. Thank you for trying my recipe and let me know how it turns out for you.

    Can I use honey instead of sugar in the tomato jam

  • @justcookwithdustin5678

    I found this on google. If a recipe calls for 4 cups sugar, use 2 cups honey. Cook the jam or jelly slightly longer than time stated in recipe using sugar. When substituting honey, use a commercial liquid or powdered pectin. It’s seems that you can make this substitution. Let me know how it turns out for you.
