Recipe:
🥗 Ingredients:
- 3 eggs (hard-boiled and cubed)
- 1 zucchini (sliced)
- Olive oil (for cooking and dressing)
- Black pepper (to taste)
- 1 lettuce (any variety, roughly chopped)
- 4 medium tomatoes (chopped)
- 150g black olives
- Rocket lettuce
- 150g mozzarella
Dressing:
- 1 clove garlic (minced)
- Juice from 1/2 lemon
- Bunch of parsley (chopped)
- 1 tsp brown sugar
- 1/2 tsp salt
- Mix all dressing ingredients well.
Instructions:
Heat olive oil in a pan.
Cook zucchini slices until browned, season with black pepper.
Mix zucchini with lettuce, tomatoes, black olives, and rocket lettuce.
Add mozzarella and cubed eggs.
Pour dressing over the salad and toss well.
