Chef Luke Zahm visits Zócalo, a new food-truck park located in the Walker’s Point neighborhood of Milwaukee, Wisconsin. Jesús González of Mazorca Tacos shows Luke how he and his mother use handmade tortillas and traditional fillings to create tacos that are filled with flavor and love. Then, Luke travels to Milwaukee’s Eastside to check out Crossroads Collective, a food hall filled up-and-coming food entrepreneurs such as Egg & Floor, Heaven’s Table BBQ, and Frida Soup & Sandwiches.

Fantastic episode! Well done Luke! This episode was one where we clearly had benefit by having a bona fide chef host. Luke was able to give some more in depth flavor analysis and show appreciation of the craft, especially with the BBQ. Absolutely right that the BEST BBQ is not "Fall-Off-The-Bone" but rather "Easy-to-Bite-Off-The-Bone". When you take a bite, it should leave a bite-shaped hole in the meat. Well done Luke! All looks delish!
I'm lucky enough to work within a block of two excellent food halls in Chicago (or at least I did until they told us to stop coming into work). It's good to see deserving restaurateurs get a chance to break into lucrative market locations without having to pay full store-front rents on downtown locations.
