Zesty Caribbean Pan Fried Sardines Recipe.

Here's a quick and simple recipe for making Caribbean style pan fried sardines. Using a freshly made zesty marinade to infuse these lovely sardines with a ton of flavor, then we'll dust them in seasoned flour and pan fry until they are golden brown and crispy.
You'll Need...
1lb sardines
1/4 teaspoon salt
1 clove garlic
1 shallot
2 sprig thyme
2 scallions
1 tablespoon parsley
3 leaves shado beni
1/4 scotch bonnet pepper
pinch black pepper
1/2 lemon (juice)
3/4 cup flour
1/4 teaspoon curry powder
veg oil for frying

Watches a Jamaican coworker eating the hell out of some home made sardines at work yesterday and I had to have some. As a seafood lover never had fresh sardines but the one in the can. As she ate I couldn't believe it didn't have that strong smell that the ones in the can have. At he farmers market picking up some fresh sardines and using your recipe.👌

you can eat the whole fish, bone and all since it's been hard fried. They will just be crunchy. cut off the head and tails if you're squeamish.

Aloha Chris, Great looking recipe, thank you for sharing. Here in Hawai'i we love to crunch these up bones, head, sometimes even the innards. Whole sardines, smelts, and locally caught oama (juvenile goatfish) we deep-fry them all until crispy. I like to dip them in sauce made from combining shoyu (Japanese soy sauce), lemon juice, and chili peppers.
