You really love your Italian food like I do which explains your trip to Italy to sample their food, brother. Food in Italy is out of the world especially in the south. I actually loved your Italy vlogs where I have been to 5 times and enjoyed your Bangkok visit as well with the Halal markets serving delicious Thai food - been to Bangkok twice. Are you planning to go abroad again to sample any food and tour around? Malay food is pretty good as I have been to Malaysia 6 times and I am going again this summer combing my 4th trip to Indonesia - even Indonesian cuisine is pretty decent too.

Use Flank steak for the Philly cheesesteak, you can flash cook them after cutting into strips - great flavour - not as fatty as a ribeye. Rib eye there'll be a lot of financial waste as it has the fat cap in the middle ;)

Old Southall needs better quality food places! There are too many rip offs who make frozen stuff. Also please prioritise customer service! Certain shops in the area are terrible at it. (Unless they know you or you speak their language)

"Authentic Italian pastas" oh really? Chicken, chilli and cheese on "authentic Italian pasta? What part of Italy does that come from? For the Philly steak ingredients, you forgot salt. It should be around 1%-1.2% of the weight of the meat in salt. You said a cheese blend what cheeses are you using? If it's outside of American, Provolone or Cheese Whiz it's not a Philly Cheesesteak, it's a steak sandwich. No one really cares about authenticity if the food is good, but claiming something is authentic when the food isn't just makes me thing the food is going to be bad before I've tasted anything. If a place is calling itself an authentic Italian restaurant and they have Carbonara with ham and cream in it, I don't bother wasting my money in there since they can't get the basics right. There is nothing wrong with ham and cream in pasta. I quite like it, but it's not authentic and it's not carbonara. "Authenticity" it's much more trouble than it's worth. I wouldn't use it even if I thought my dishes were authentic. Do you prepare your pesto using a mortar and pestle? Because that's the authentic way of doing it, but is it worth it to you? If your restaurant only did paste then perhaps it would be worth it, but are people going to pay £16 for pasta and really good pesto? The word authentic is thrown around too much by people who have no idea what authentic is. It's lost all meaning and I refuse to eat at a place that uses the term if it's easy to see they have no idea what regional food is or how to make it.
