You're Using the Wrong Coffee Cups!

Тәжірибелік нұсқаулар және стиль

So many of us are messing up the ratio of our coffee drinks because of using the wrong cups. You wanna make a cappuccino, but you are using a bigger cup, so if you fill up to the top your ratio is going to be wrong.
In this video I explain about coffee ratios and the cups I use to make sure I get the ratios right every time.

Super helpful info! I realized my flat whites weren’t flat whites at all when served in 10oz cups. When I first started taking making espresso at home more seriously, I was drinking 16oz lattes. I quickly learned that the milk was simply drowning out any true flavor we could be getting from the espresso and have moved down to 12oz cups or lower. The difference in flavor is incredible, and we can get so much more out of our drinks now because of that cup adjustment. Also good to know about cappuccino cup sizes - didn’t realize it should be that much smaller, either. Thank you!

With liquid ratios in a glass you actually want to use volume. This is because the various milks and brewed espressos have mildly different densities. The volume ratios will be consistent. The weight ratios will not. With solids such as coffee beans to grind it’s better to measure by weight that way you can eliminate the differences between how people measure say, a tablespoon.

Good question. It depends what you like and there's nothing wrong with having a slightly stronger flat white. I have not been able to decide between Gaggia Lelit Rancillio Bezzerra etc under $1500 for two months! If someone with your experience has a Silvia with PID then it's got to be good for a newbie like me!

I like the machine - if you can get the newer one with the actuating wand it's great, and it shouldn't be too expensive to get the PID. For $1500 make sure you spend most of that on a quality grinder. The Silvia is a great machine and I really like mine - great for entry level, but any coffee nut will tell you the grinder is by far the most important part.

Hi Charlie, I know this is a fairly old video, but it's just helped me a lot on my home barista hobby. Now I know what coffee cups I should go for and also what coffee drinks I should have as personal preferences. However, as a good cocoa addicted person, I was wondering where does mocha fit on your list? Is there a special size or can it go as mocha caps, mocha lattes and so on, just respecting their no-choc-boosted counterparts? Thanks a lot

Yeah there are some drinks that have an actual standard like cappuccino (there's literally a government definition in Italy). You can't make coffee 'wrong' 🙄 it really is ridiculous. Sure, some people got together and said "we think this is the best way to drink or prepare coffee" but what does that matter? I completely enjoy coffee the way i prepare it, but it's 'wrong'. Should i make it taste a certain way so I can brag about how much I care about coffee, or just make a drink I like? Don't get me wrong, i get people being interested in the different flavors. But most people just don't care and theyre not 'ruining' their at home coffee because it's not exactly a certain temperature or because milk was added

  • @Solidsnake0208

    @Solidsnake0208

    2 жыл бұрын

NuggetDoll what I meant by this is a lot of people who make coffee for a living make it wrong. What I mean by ‘wrong’ is they call it a latte, cappuccino, flat white etc, however all three drinks are practically the same. Even when you know a little bit, it’s very easy to observe that most of them have no clue how to use the equipment properly. Their drinks aren’t being made that way because that’s their opinion of what a good coffee tastes like, it’s purely that’s what you get for your money, because that’s the result they got the first time they turned on the machine and they’ve never improved on their technique as they haven’t struggled to make money selling coffee.

Finding your videos really helpful! Quick question regarding the Flat White... you state 40 - 50ml of espresso. Is this in volume including the crème as seen on a shot measuring glass? I weigh my shots to get 36g liquid from 18g ground coffee (so that's only 36ml of espresso)

  • @homecafecharlie

Yes it's better to weigh it for accuracy. A traditional single shot is supposed to be 25ml (10g basket) and on the 18g basket it's 40ml once the crema has dissipated somewhat, but go by weight for sure.

An iced latte is not a specific drink, and can be made with anything from an 8oz (240ml) cup to a 20oz (600ml) cup (a la Starbucks). I would advise never going bigger than 12oz (350ml) or the coffee taste will be too mild.

🤣 I adapted them to a double shot since I never use the single shot basket. The only one that is actually incorrect is the cappuccino. At the time I didn't know that there is actually a certified Italian cappuccino which is a 20-25ml single shot with 110ml of steamed milk airated so it fills a 150-160ml mug. But the rest are all within bounds. A latte also has no real definition, just coffee with a LOT of milk 🤣

Well a lot of you might kill me for this one but anyways... I decided to buy a Loveramics Egg 200ml. and I'm not sure if it's necessary for a real cappuccino to use a Double shot espresso. I prefer making my Cappuccino with a Single Shot. Is this completely wrong and if I do this, what is the name of this creation?

Either adjust your total volume while maintain ratios or don't fill a cup right to the top perhaps would be alternative solutions. Glad you seem to get so much pleasure out of it anyway. Interesting.

He never explained how having all these cups is actually necessary. None of these cups are going to help you get the ratio right, at most they'll help you get the right volume for the foam/milk, but definitely not the ratio.

The framing of this video seems a little odd. It seems like the main issue here is that the ratios are out of wack in a lot of places, but trying to attach that to cups seems an odd move

Thanks for the comment. I think because people always want to fill the cup to full, they end up either putting too much milk (cup is too big for the type of drink) or too little milk. Having the right cups makes the ratios easier to get ;)
