I've been a chef for 30 years, I got a Super Gou 8" chef knife a few months ago to be my main work knife. It is easily the best knife I have ever used or owned. I can't recommend Yaxell highly enough.
Yaxall knives are phenomenal. You'll love it, it's light years better than the dalstrong. The dalstrong is a Volvo which is a nice car but the super gou is a lambo. Will chip is you try to cut bone or frozen foods. Take good care of it
Don't hone that knife bro! It's an SG2 steel core and @63 on the Rockwell Hardness Scale its harder than the hone. What ya want to do is use a strop. A leather strop like an old fashioned barber would use hanging off the chair to sharpen & polish up his cut throat razor blade. You can even use a genuine leather belt if it has correct finish! Or a couple light passes on a high grit water stone, like a 6000 if your edge is in great condition. Great choice on a Beautiful and well crafted Knife!!
Yaxell is a legit brand and they also make Enso knives which I happen to have a set. Love my Ensos. Super Gou is a line with a better steel combo around 62 rockewel if I remembered correctly? ignore the hater, nice knife dude. I wouldn't compare it to a Dalstrong tho, lol. That's not even a fair match.

Thanks for the support!!! It’s my upgrade from the Dalstrong more than a comparison :) I was quite torn between this and the Enso version since I like the finishing on the Enso better lol
Having a set of Global knives and block. I treated myself to a Super Gou Nakiri 20cm it's far far superior than the Global. Yes it reflects on the price point.. but being 63 on the Rockwell scale. I keep its edge better. I'm just a home cook enthusiast. I enjoy prepping more with this Yaxell. I will be replacing my Global with yaxell super gou. Love the red Marcada handles to. With the polished end and character on the end of the handle Feels like something passed down from generations. I always respect my knives and Whetstone them with relevant stone grit. 200 .400 800 1000 20000 and strop sometimes I'll hone it.on my trusty still I've had 40 yrs and has done 100.000s of movement and is irreplaceable. I remember cutting grapes as thin as contact lenses. Perfect knives in my opinion.
It was the printing on the top of the box that said "OPEN THIS END" that fooled him.
Bro, why did you hone it with a regular steel honing rod?!? The knife has a Rockwell Hardness of 63! I am 99% sure that the it is harder than the rod. Please look for ceramic rods that can handle such a knife as yours. One of the reasons it didn't cut the tomato was probably because off the Damascus steel. You have 80 layers on each side and in the first few weeks the Damascus cladding will be "Stickier" It would be interesting to revisit this test after you have cooked and cut with the knife and washed it many times.
5:09 It's not a "D" handle. It's an oval handle.

Please don’t use Sharpening rod for the Japanese knife. There are excellent whetstone options out there at different price point.

I use a tormek sharpening machine with a 4000 grit wheel. Runs constantly in a trough of water at low speed and my yaxells are always sharp as can be. Bit of a cash layout upfront but oh so very worth it 👍

Just on a side note, everything is made in China, even when a product is made somewhere else, guess what, its parts are imported from China. Nothing is bad about China, its cheap and awesome product makes me rich. Anw, that’s beside the topic. This knife is a Japanese product. You can go and argue with the manufacturer. Haters can hate. Good job @AngryCowMasterCuts for making the haters hate.

honing a sg2 knive with a metal stick… you are ruining your expensive knife

You are correct! I did more research after i made the video about SG2 and i got a whetstone for it specifically. I have another honing stick that is of different material i use for my other knives
Using a steel will wreck you beautiful knife.

NEVER!!! Use a honing steel for these knifes. Use the ceramic.

This is a decent knife for a knife made in China, i have seen it in Aliexpress site for 35 euro, different brand same knife. After 3 weeks of home cooking you will have to sharpen it. Then you say legiy Damascus, here i know you never went to Japan, this is a Damascus pattern, not real Damascus.

Where are you getting that this is Chinese? Because you saw an imitation on Aliexpress? Yaxell knifes are made in Seki, Japan. The people of Seki City have been making knifes for hundreds of years.
