    6:09 in. Not that it matters but those are "Needle Nose pliers". "Bullnose pliers" have a flat snub nose end. Great video, well done. Love the idea of the tub.

    What's the preferred method of cleaning the conveyor assembly? I've got six stores I maintain on the side and the owners wont let me clean them as often as I'd like, so they get pretty bad. When I took over cleaning our first location, it hadn't been done in 2yrs!!! Now it's done every 6mos, but we're pushing for at least 3 month cycles. It's a triple stack in a high volume location. If I could show you pictures of that first time you'd be in shock and horrified. Their XLT is only 3yrs old!!! I've worked on 30yo Middleby Marshall ovens that didn't look this bad. I feel like im gonna have to resort to wet soda blasting, but I fear this will bite me in the rear later on.

    Hello. Im about to buy a set of ovens Compared to middleby marshall that I have to this ones . What is your preference?

    @@luissosa2948From a cleaner's perspective, neither are all that difficult. however, it really depends on the store's layout and space. XLT ovens use a rigid conveyor which can be quite challenging to navigate in tight spaces during maintenance. In contrast, Middleby's use a foldable conveyor, making it easier in tight spaces. The XLT side panels are much heavier and longer than Middleby Marshall end panels. As far as reliability goes, it all depends on age and availability of parts for used units. Many older Middleby ovens still running today are doing so on borrowed time since many parts are obsolete. XLT are preferred for their build quality and efficiency and therefore becoming popular in high volume settings. I'm not familiar with any newer Middleby ovens since the company I've been working with upgraded to XLT, so my opinions are somewhat skewed. I'd recommend more research before simply taking my opinion as solid advice.

    @@luissosa2948 What kind of middleby marshall do you have? Is it a conveyor or an old school chicago-style 30-pan rotating oven? I own a chicago pizza franchise and we use a triple decker XLT oven. To be very honest with you, it cooks the pizza WAY more consistently than the rotating oven, and in less time. If you are talking about the middleby conveyor oven, I've heard they're pretty good, but XLT is the preferred oven if using a conveyor. You can cook a deep dish/ stuffed pizza in about 15 minutes perfectly with the conveyor oven. Just be sure to clean and scrub out the oven every month to keep a consistent cook quality. You do not even need to take the oven and belt off, just use a vacuum to clean out the debris in between the belt and burners when the ovens are off, and then when the oven is on and hot, use a wire brush to scrap the belt.
