[Ingredients]
Two chicken thighs, one chicken breast about 800 grams
Red Onions 150g
Garlic 30g
Galangal 60g
Lemongrass 60g
Turmeric Powder 1 teaspoon
Coriander Powder 1 teaspoon
Cumin Seeds 1 teaspoon
Fennel Seeds 1 teaspoon
Oil 2 tablespoons
Brown Sugar 60g
Salt 1 teaspoon
Peanuts 120g
Dried Chili 5pc
Red Onions 100g
Garlic 10g
Galangal 20g
Lemongrass 20g
Tamarind 25g
Sweet Soya Sauce 1 tablespoon
Coconut Sugar 40g
Honey Water (a little, spread on the surface when BBQ satay)

Peel off the skin and cut it into cubes

Grind the following ingredients in a blender and marinate the chicken cubes for at least 4 hours
* Red Onions 150g
* Garlic 30g
* Galangal 60g
* Lemongrass 60g
* 1 teaspoon of turmeric powder
* 1 teaspoon of coriander powder
* 1 teaspoon of cumin
* 1 teaspoon of anise
* 2 tablespoons of oil
* 60g brown sugar
* 1 teaspoon of salt

Deep fry 120g of peanuts, crush them
Grind the following:
* Dried chili 5pc
* Red onions 100g
* Garlic 10g
* Galangal 20g
* Lemongrass 20 g
Then fry them in the oil used to deep fry peanut
Pour in 200ml of water, and then put the crushed peanuts
Add 2 tablespoons of tamarind water (use 25 grams of tamarind, add water to squeeze out the juice)
Add 1 tablespoon of sweet soya sauce, 3 pieces of coconut sugar (about 40 grams)
Add half a teaspoon of salt at the end

羅望子 25 克
甜豉油一湯匙
椰糖 40 克
蜜糖水 (少許,烤沙爹時塗在表面)
[做法]
準備雞肉
撕掉雞皮然後切條再切塊
醃雞肉
用攪拌機攪碎以下材料,醃雞肉至少4小時
*大紅蔥 150 克
*蒜頭 30 克
*南薑 60 克
*香茅 60 克
*黃薑粉一茶匙
*芫茜粉一茶匙
*小茴香一茶匙
*大茴香一茶匙
*油兩湯匙
*紅糖 60 克
*鹽一茶匙
準備沙爹醬
炸花生 120 克 ,撈起打碎
攪碎以下:
*五條乾辣椒
*大紅蔥 100 克
*蒜頭 10 克
*南薑 20 克
*香茅 20 克
再用剛才炸完花生的油炒香
倒進 200ml 的水,再放剛才打碎了的花生
加兩湯匙羅望子水 (羅望子25 克加水把汁擠出來)
加一湯匙甜豉油,三粒椰糖大概是 40 克
最後放半茶匙的鹽調和一下
準備配菜

紅蔥頭
烤沙爹
