I showed this to my husband that owns a restaurant here in Yokohama. It’s meant to be charred, they don’t clean it for very good reasons. Apparently it’s for flavour, heat retention and so flour doesn’t stick

No. That's not seasoning. That's them not washing it. Seasoning would be much thinner. I used to work at an authentic Greek restaurant which also sold pizza and our pans never looked that bad. 🤢

Tbh the pan actually needed that excess charred flour on the plate so it doesn’t melt down onto the oven when they bake but they also needed to clean it a little because they needed the holes to circulate air underneath it

As someone who's worked in a pizza place, we used those exact screens and I've seen new ones. They have a black coating because, I think, it's non-stick. Also, the stuff stuck on it works like seasoning on cast iron cookware.

Should have tried The pink stuff It’s cleaner and yes it’s actually called that also I would have tried baking soda and peroxide

It’s supposed to be like that, not that bad but it supposed to have the black encrusted flour on the side of the little bars. I’m too lazy to explain anymore so if you want more info find it yourself.

I used to work at a pizza place, all our pans looked like this. Our process for cleaning them was wiping them with a dry rag, scraping them a bit with steel wool, then coating them in oil and putting the next round of dough on

Are you using acid in your dishwashers?

From working at a Papa John's, I can tell you that we never wash those pans (we call them screens). We will run them through the oven if we drop them on the ground, that's how we clean them.

That is a Pan that they cook the dough products on. The stuff covering it is the seasoning. It gets put in a dish washer and sanitized everyday. Plus it gets put though a 450° oven for at least 7 minutes so, it's perfectly fine and it's as intended.

the plate she used to soak it in is probably cleaner than anything in this world

And it shouldn't be caked on so hard you have to pick each bit off single handedly! It's meant to be flour. And the holes are, again, meant to be uncovered. That looked like MUCH more than just flour. What if someone was allergic to an ingredient that's on that screen and they almost or DID die because employees can't handle sanitizing their cooking screens? It's a major health hazard.

Even though she probably rinsed off the vinegar, there was still some likely left behind that allowed the metal to oxidize. That's why people who use vinegar to remove rust from cast iron pans will cover their pan in baking soda or soak it in a water and baking soda solution to ensure there is no acid residue left behind when they are done.

Pizza screens are supposed to be a bit black kinda the same way a cast iron is seasoned ya know. But yea when it gets to that point normally we throw them away and get new ones. It’s a very cheap metal and it always comes in big boxes of many. (Also even tho that buildup of flour and other burnt stuff is a bit nasty. The heat of the oven will most likely kill all the bacteria

Wow. Love the video. I know it's a bit late but if your oven has one of those self-cleaning modes, you could have stuck the pan in during and all that black stuff would have turned all that into ash. We accidentally left my well-seasoned cast iron in the oven during self-cleaning and it was bare metal when we took it out.
