World's Fastest Fillet Job

This is a professional who quickly fillets recreational fishermen's catches for a small fee. He uses two different knives. The first is to fillet. The other is to remove skin while purposefully leaving the dark "fishy" flavored flesh between the skin and the orange meat. Great Lakes kings here don't have fatty "belly meat" like their Pacific cousins either, so don't sweat the belly left behind

    Because you have been working too much and neglecting your personal needs doing stuff that has nothing to do with you (or at least you have been supposed to be fdoing it) or too long and now your system is rebelling and trying to force in a little personal space at the end of the day. You don't have the time or energy to really do something with this space - so youtube videos. This is what it's like when you are in the pipeline and the days must never end because you are not fulfilled and never begin for the very same reason. If that's the case - You just enjoy your fish video, brother, we've all been there.

    If you look closely, there are two pegs on the cutting board to prevent the fish from moving around when cutting. He pounded the head on it to make it stick.

    Id give this a 7/10. Reason why is I find appreciation from being able to utilize the belly meat. It looks like that salmon has some belly meat worth eating. I like the fact that he doesnt need to gut the fish per se. I also like that he harvests the eggs as well. The butcher wasted A LOT of meat while skinning the filets.

    He purposely doesn't cut all the way to the skin because the meat closest to skin is dark and many people find it has a bad taste. He will cut down all the way or keep skin on per customer request (Source: I've met this guy and he's filleted salmon for me)

    I agree there's definitely some wastage. Great efficiency, but far from perfection. We don't know for sure though. They could be using nearly every part of the fish with purpose. My hopes at least. If not, there's still good meat being wasted without a doubt

    You can tell they did that a time or two. Looked real efficient. In the time it took him to filet a fish, I would be trying to figure out how to hold it correctly. Awesome job and great video

    People are commenting on if they are keeping the eggs . If they are not keeping them why would they be cutting them out ? They would have left them with the other guts . Others say it's a waste of meat ? When they cut by the fins that's just belly fat anyway and that small peace by the tail is a small price to pay for the speed they are cleaning . This is a great way to clean , thanks for sharing

    No, there is definite waste on the fillets. Not talking about the bellies, which are not toxic. The organs can be, but the description was talking about belly meat that these fish do not have, so your point is moot. The point was to be fast, so I get that, but I get ticked when I leave meat on the skin.

    +Preston Bozeman First he is using Yanagi knife. Then, at the end, it looks like Taokobiki. You can also do the job done with Takobiki or Sajihiki (western type of Yanagi knife). The trick is that you have to sharpen them yourself, using 2 wetstones - one medium and one finishing. Can't do it with one of those metal travesties that comes in your knife block. Look on eBay for the names I specified.

    Is that Mark fileting? He's hands down the best on the Great Lakes. Kills it in my town! He filets 90% of my fish and I can do it myself but I like giving back. Guy is stand up and one of the best in the biz

    A lot of meat on the skin. I’ve worked in a salmon processing factory when I left school in Scotland. The fish went into a heading machine and were machine gutted.Then hand filleted.Then trimmed by hand and pin boned. Where I worked the salmon sides had been smoked with the knuckle on the backbones fat etc. I could trim all this off with a filleting knife 2 sides of salmon a minute. The sides first are sent through machine to take the hard layer of smoked fish off the top of the side of salmon which is a very sharp blade between two rollers and it takes the thin layer off very cleanly(this was mashed up and used in fish pate).Then we would trim the sides of salmon till all you had was a clean piece of fish then they are sent through a pin bone machine and then hand checked for bones and placed into crates.They then went into another part of the factory to be thinly sliced like what you but in the supermarket. Obviously smoked salmon is more rigid and easier to work with.I was very fast faster than this video.This is very skilful though. Cheers.

    There's a small layer of dark meat between the skin and 'flesh' that doesn't taste very good. IMO, that's why the fellow is leaving a small amount of meat on the skin. ...what I saw that my chef would grill me for, was leaving the meat on the bones! Grab a spoon and keep that shit! Amazing for chowder. ;)
