    Would love to watch you hone a knife in the same manner to see how much metal flakes, if any. I rarely see chefs even wipe - let alone rinse - after honing and I wonder if anyone has ever really documented this.

    If you mean the stick chefs rub their knives on, that doesn't leave flakes. It just realings the knife's edge.

    @@alfredofettuccine2397that’s logical and what I’ve been told, but it’d be interesting to see it the way he shoots these - which is amazing. I’m sure there’s potential for weak spots to flake off if it’s been honed frequently and the metal has been bent back and forth if even only 10-20°. (Holy crap on a cracker! Holding down “0” (zero) on iOS gives the degrees symbol option! I swear I’ve tried that before and it didn’t work.)

    It absolutely removes metal from the blade and it falls. Don't use a steel over your cutting board/food. And always wipe the blade clean after. I have been cooking for 20 years and this is one of my biggest pet peeves. Even a ceramic honing stick will remove slight amounts of metal.

    Was thinking the exact same thing 😂. When you sharpen a knife, youre shaving material off, and that material doesn’t just disappear so obviously some of it is still gonna be on the knife. Also you can see the metal shavings on the knife with the naked eye. I guess someone was just really bored and wanted to make a video haha

    I think it would be good to do a comparison between this and between using a whetstone. I think a whetstone probably produces a fine metal dust mixed with stone dust. Typically you would wash a knife after using a whetstone anyway since you usually use water with the whetstone and you can see the dust.

    @@DailyDoseOfInternet Not to deny how often micro-plastics make it into our food, but I'd bet a small amount of money that the strand discovered at 0:29 is a hair. Not at all an expert, but microscopic plastic fibers don't seem to kink in the same way as hair does. I also imagine there are a lot of insect appendages that might make their way into a block of cheese at some point in production. I wouldn't be too surprised to find the thing at 0:40 was some sort of antennae.

    You should do a video stropping a knife, it’s the process of removing the material that flakes off after sharpening. You use leather to clean up the edge so you don’t have the rough metal along the cutting edge.

    What you do is strop the knife after sharpening , it gets rid of the small metal fragments of sharpening & then you can wash off the knife & on high carbon knifes , a thin coat of food grade mineral oil won’t hurt if you apply it to the knife .

    My husband is a professional sharpener and he always says that those machines aren't good enough for sharpening. Actually, they're worthy to remove the dead steel from the knive after the sharpening, nothing else :)

    Yea, I would never get my knives near this type of sharpener. I learned how to sharpen on a whet stone, I love them. I even upgraded mine this year.

    Well, I'm sure part of it is the excessive downward pressure they were applying to the knife. No knife I've used is soft enough for one of this sharpeners to peel metal off like that under normal use.

    Honestly the worst thing here is the use of a pull-through sharpener. If you sharpen a knife like you're supposed to, with a sharpening stone, this doesn't happen.

    So after doing any work with a knife (honing, sharpening, etc) always wash and clean the knife afterwards no matter the material. Even ceramic can remove small pieces of metal. Sounds like solid advice.

    I don't just wash my knife. I polish with two more stones then deburr on a strop. That's what actually gets rid of the burr, makes the edge cleaner for cutting even delicate fish, and makes it shinier to delay corrosion (I use aogami steel).

    Just a wipe with a paper towel or kitchen towel will clean the knife plenty good. And most knife sharpeners are not that aggressive. Certainly a honing rod will not do that to a knife.

    Most of the time people only sharpen their knives one side at a time in that typical motion you see on tv or movies so most likely a lot of people wouldn’t have this problem as the normal motion wipes it away, still should always wash any utensil after any use
